STAINED GLASS CANDY
This recipe gives you two variations-green-colored candy with wintergreen flavor and red-colored candy with cranberry flavor. I like to make both because they look so pretty together on a tray. -Karolin Kershner, Barrington, Illinois

- Butter a 15x10x1-in. pan; set aside., In a large heavy saucepan, combine the sugar, corn syrup and water. Cook and stir over medium heat until sugar is dissolved. Bring to a boil. Cook, without stirring, until a candy thermometer reads 300° (hard-crack stage)., Remove from the heat; stir in oil and food coloring (keep face away from mixture as oil is very strong). Immediately pour into prepared pan; cool. Break into pieces. Store in airtight containers.

- Put the granulated sugar, corn syrup, and water in a saucepan. Clip your candy thermometer to the side of the pan.
- Bring up to a boil, while stirring to dissolve the sugar. Once boiling, stop stirring and let it bubble away until it reaches 300F on the thermometer. As it gets close to 300F, add in the drops of food coloring, but don't stir, it will mix itself in.
- When it reaches 300F take it off the heat, stir in the flavoring oil, and immediately pour out onto your surface. It will spread out by itself. Be VERY CAREFUL, it is very hot.

- Remove from heat and CAREFULLY pour 1/3 of the the hot sugar mixture into each of the two Pyrex measuring cups. Immediately add food coloring and flavor oil to the remaining liquid in the saucepan as well as the measuring cups. Stir well.

- Clip the candy thermometer to the side of the pan (or periodically check with an instant-read digital thermometer). Make sure the thermometer does NOT touch the bottom of the pan. Boil over medium heat, stirring occasionally, until the temperature reaches 300 degrees. This will take a while. If you remove from heat before 300 degrees is reached, your candy will not harden properly.
- Once 300 degrees is reached, remove the saucepan from heat and immediately add food coloring and flavoring. Stir to combine.
