EASY CASHEW SEA SALT TOFFEE
Ready in minutes, this toffee takes all the guesswork out of candy making, and is by far the most requested holiday treat I make. My family won't let me in the door without a few batches in tow. Makes a great gift wrapped up in a holiday tin!

Steps:
- Butter the top edges of a 2-quart microwave-safe casserole. Add butter, 1 teaspoon of the Diamond Crystal® Sea Salt, sugar, and water to the casserole. DO NOT STIR. Microwave on high for 6 to 8 minutes. Check contents for color change. Continue microwaving on high a minute at a time until the mixture just begins to turn a tan color. You need to watch it carefully, and remember: DON'T STIR.
- Sprinkle 1/2 cup of the chopped cashews into a 9-into circle on a Silpat mat, parchment paper, or on a buttered baking sheet.
- Carefully pour the liquid mixture evenly over the top of the cashews. Immediately sprinkle on the chocolate chips. Allow to sit for 1 minute to melt the chocolate.
- Use spatula to smooth out chocolate over the entire sheet of candy.
- Sprinkle the remaining cashews and 1/4 teaspoon Diamond Crystal® Sea Salt over the top. Refrigerate to cool completely. When cool, break into bite-sized pieces. Store tightly covered in refrigerator.

SALTINE TOFFEE COOKIES
This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Line cookie sheet with saltine crackers in single layer.
- In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
- Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

CHOCOLATE-CARAMEL MATZO TOFFEE
Matzo toffee is the Passover-friendly take on saltine toffee. A layered confection of matzo crackers, brown sugar caramel and melted chocolate, you can top it with practically anything you like, from the most elegantly minimal sprinkle of sea salt to a surfeit of nuts, dried fruit, potato chips, or a combination. Matzo toffee keeps well when stored airtight at room temperature - up to one week, if you haven't finished it by then.

- Heat oven to 350 degrees. Line a 13-by-18-inch rimmed baking sheet with aluminum foil, allowing it to go up and over the edges of the pan. Line the bottom of the pan with a piece of parchment. Arrange matzo over parchment in an even layer, breaking pieces to fit as necessary.
- In a medium pot over medium-high heat, bring butter and sugar to a boil, whisking, until thickened and smooth, about 3 minutes. The mixture may separate, and that is O.K. Stir in vanilla and salt. Quickly pour mixture over matzos. Transfer baking sheet to oven and bake until bubbly, about 15 minutes.
- Remove from oven. Sprinkle chocolate evenly over caramel and let stand until softened, about 5 minutes. Use an offset spatula to spread chocolate smoothly over surface of toffee. If you've used different kinds of chocolate, you can swirl them together decoratively.
- Immediately sprinkle melted chocolate with desired topping. Transfer baking sheet to refrigerator and chill toffee 1 hour to set chocolate. Break matzo toffee into large pieces for storing and serving.

- Preheat oven to 375°. In a large bowl, whisk flours and salt. Gradually add water and 1/4 cup oil, tossing with a fork until dough holds together when pressed. Divide dough into 3 portions., On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with a floured 1-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Prick each cracker with a fork; brush lightly with remaining oil. Mix thyme and sea salt; sprinkle over crackers., Bake 9-11 minutes or until bottoms are lightly browned.

SEA SALT & CRACKER TOFFEE

- 1. Preheat the oven to 180oC. Line a 22cm x 32cm baking tray with tin foil and spray with cooking spray. Line with one packet of Salada crackers broken into their 4 little squares. 2. Melt butter and soft brown sugar in a saucepan on a medium to high heat, stirring. Once bubbling, don't stir but allow the caramel to boil for 3 minutes then take off the heat and add the vanilla essence and swirl to mix. Don't stir the caramel once it is boiling, you can swirl it around the saucepan to mix. Also make sure the mixture is a really angry bubbling quite hard rather than a weak lady-like bubbling. 3. Pour the caramel evenly over the Salada crackers and place in the oven and bake for 5-6 minutes. 4. Take the tray out and sprinkle the chocolate chips on evenly top. Wait around 5 minutes for the chips to melt then smooth the chocolate with a spatula. No need to put back into the oven, the heat of the caramel will melt the chocolate. 5. Crush the crystals of sea salt in between your fingers and sprinkle lightly on top of the chocolate. 6. Allow to cool for 2 - 3 hours at room temperature until the chocolate is hard. You can speed the process up by placing the tray into the fridge - be careful though as a sharp drop in temperature could cause the chocolate to bloom and discolour so make sure the tray is cool to touch before you put it in the fridge. 7. When the chocolate has hardened, pull out of the baking tray and cut into little triangles with a sharp knife. Store in an airtight container for around one week.

- Now, working quickly so the brown sugar/butter mixture doesn’t set up, pour the toffee/oyster crackers onto the prepared baking sheet and try to spread them out to a single layer. - In a heavy bottomed stainless skillet, over medium heat, combine the butter, sugar, water and salt. As the butter melts, stir a few times with a wooden spoon or spatula to combine. Bring to a boil and then don't stir or touch the mixture again until it is caramel colored.
- While the toffee is boiling, prepare a large baking sheet by lining it with parchment paper or a silpat mat. (Do not use waxed paper, it will melt.) Scatter the pecans across the prepared baking sheet.
- Once the toffee is caramel colored, remove from the heat and add the vanilla. Stir to combine. Quickly pour the toffee over the pecans. Sprinkle with Maldon salt. Let cool completely. I often set the pan in the refrigerator to speed up the process, but it will also cool at room temperature.
- When the toffee is cool, break into pieces. Store in an airtight container in the refrigerator or at room temperature. Enjoy!
