- If scallops are large, cut in half and set aside. In a small bowl, combine the cornstarch, sugar and salt. Stir in water and soy sauce until smooth; set aside. , In a nonstick skillet, saute carrots and celery in 1-1/2 teaspoons hot oil for 4 minutes. SEA SCALLOPS WITH TERIYAKI GLAZE
Steps:
- Peel off the muscle on the side of the scallop and discard. Slice in half, crosswise to make 2 round pieces from each scallop. Season with salt and pepper. Heat a large saute pan over medium-high heat. When the pan is hot, add the oil and sear the scallops for 15 to 30 seconds on each side. Remove from the pan and set aside. Pour any excess oil out of the pan and discard. Carefully deglaze with sake while the pan is off the heat. Return the pan to the heat. Add the soy sauce, ginger, garlic, honey, and barbecue sauce. Bring to a boil, lower to a simmer, and cook until thickened. Add the scallops back to the pan and toss to coat and heat through. Remove from the heat and add the green onions. Serve immediately over wasabi mashed potatoes.;
- Cut the potatoes into large pieces of equal size. Put in a medium-size pot and cover with salted water. Bring to a boil and cook until tender. Drain thoroughly. Pass through a food mill and whip in the butter, hot cream and roasted garlic puree.
- Blanch the spinach in boiling salted water for 10 seconds. Refresh in ice water. Drain thoroughly. Transfer to a blender and add wasabi powder. Process to a puree. Stir into warm mashed potatoes. Season with salt and pepper, to taste.

- Heat a large nonstick skillet over medium-high heat and add the peanut oil.
- In a bowl, mix together the soy sauce, vinegar, brown sugar, cornstarch, ginger and sriracha. Set aside.
- Add the scallops to the skillet and sear until nice and browned, 2 minutes per side. Remove to a plate.
- Crank up the heat to high. Add the baby corn, squash and broccoli and cook, stirring everything around, for 2 minutes. Then add the snow peas and chile pepper and continue to cook for about 1 minute.
- Give the reserved sauce a quick stir and add it to the skillet along with 1/2 cup water. Continue to cook until the sauce thickens, about a minute or two. Add the scallops back to the skillet and gently stir to coat them in the sauce.

My husband makes this for us about once a week. It is so wonderful that I had to post it. We often use chicken instead of scallops and substitute different types of cabbage. It always turns out delicious. The garlic is KEY! :)

- Heat half of the olive oil in a large pan over very high heat. Add scallops and cook until just done. Remove and set aside.
- Add broccoli and bok choy. Saute until they begin to brown and add bell peppers, onions and garlic. Pour in half of the rice wine vinegar, more olive oil and some soy sauce.
- When vegetables are almost fully cooked, return the scallops to the pan. Add water chestnuts, bamboo shoots, remaining olive oil, rice wine vinegar and soy sauce. before serving add cashews and allow them to cook for a minute.
- Serve immediately over a bed of white rice.
- NOTE: The scallops tend to lose a lot of moisture into the pan. It is sometimes necessary to drain off the excess liquid, and return the pan to the stove for a moment before serving.

SEARED SEA SCALLOPS WITH FRIED ONIONS

- Soak capers in water to cover for 10 minutes. Rinse under cold running water and pat dry. Slice onion in rings one-fourth-inch thick. Separate rings.
- Heat enough peanut or vegetable oil to come one-fourth of the way up the side of a deep fryer. Lightly dredge the onions in the flour and place in a frying basket. Deep-fry until golden. Drain on paper towels. Dredge the capers with the flour, deep fry and remove with a slotted spoon when golden. Drain on paper towels.
- Heat a large nonstick skillet until hot. Season scallops with salt and pepper and saute them in two teaspoons olive oil in one layer over high heat, turning once, until seared and opaque, about two minutes each side.
- To assemble the salad, arrange the tomatoes on four plates. Place the scallops on top. Combine the quarter-cup olive oil, garlic and vinegar and sprinkle lightly over the scallops. Season with pepper and garnish with the onion rings, capers and basil leaves.

- In a large sauté pan, cook the olive oil, sea salt, pressed garlic, and grated or pressed ginger over a MEDIUM to HIGH heat for about 1-2 minutes. Then add the coconut aminos and water chestnuts. Sauté them for 3-5 minutes, or until the water chestnuts absorb the olive oil-coconut aminos mixture. They’ll turn an amber color when done.
- Push the water chestnuts to one side of the pan and add the sea scallops. Cook for about 3-5 minutes on one side. Then flip each sea scallop over and cook for another 1-2 minutes. Next stir everything back together in the pan and add the bok choy. Cook for no more than 1-2 minutes and then stir in the green onions.
- Remove from heat, sprinkle with sea salt and pepper, and serve. If the bok choy still tastes too grassy for your liking, then add a sprinkle of garlic salt or onion salt (or both!) to your stir-fry.
