SEARED SEA SCALLOPS IN SPICY MANDARIN ORANGE SAUCE

- 1. For the sauce Bring the orange juice, ancho chile powder and zest and juice of 1 lime to a boil over high heat. Reduce heat to simmer and simmer for 1 hour until thicken and syrupy. Remove from heat and whisk in butter 1 slice at at time until melted. Set aside and keep warm.
- 2. In a large skillet add the oil and get it hot. Season the scallops with salt and pepper. Sear the scallops in batches until golden on outside. About 2 minutes each side.
- 3. Serve with sauce

- Put the scallops on a paper towel-lined plate and pat dry with more paper towels. Transfer to a medium bowl and add 1 tablespoon vegetable oil and 1 1/2 teaspoons coriander; season with salt and pepper. Toss well.
- Using a sharp paring knife, slice the skin off the oranges. Working over a bowl to catch the juice, slice between the membranes of the oranges and remove the segments. Transfer the orange segments to a large bowl.
- Make the dressing: Add 1 tablespoon of the orange juice to a small bowl along with the lime juice, fish sauce, remaining 1 teaspoon coriander, 2 tablespoons vegetable oil, and 1/2 teaspoon each salt and pepper. Whisk to combine and set aside. Add the cabbage, cilantro, red onion, jalapeño and peanuts to the large bowl with the oranges and set aside.
- Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the scallops in an even layer. Cook until golden brown on the bottom, about 3 minutes.
- Flip the scallops and cook until opaque, about 2 more minutes.
- Add the dressing to the cabbage-orange slaw and toss well to coat; season with salt and pepper. Divide the slaw among plates and top with the scallops.

SEARED SEA SCALLOPS

- In a large bowl, mix together flour, salt, oregano, thyme and lemon pepper. Roll scallops in flour mixture until lightly coated on all sides.
- Heat olive oil in a skillet or frying pan over high heat. Add 4 scallops to the pan and sear on all sides (about 2 minutes for each side). After turning scallops, add 1 tablespoon parsley and 1 teaspoon lemon juice. Remove scallops from pan and place on a plate in the oven to keep warm until ready to serve.
- Repeat until remaining scallops are cooked, tossing each batch with parsley and lemon juice.

- Place jalapeno, rice vinegar, olive oil, and Dijon mustard in a blender. Puree on high until mixture is completely liquefied, 1 to 2 minutes. Season with salt and black pepper to taste.
- Season scallops with sea salt and cayenne pepper. Heat vegetable oil in a skillet over high heat. Place scallops in skillet and cook until browned, 2 to 3 minutes per side. Transfer to a plate. Garnish scallops with orange segments and drizzle jalapeno vinaigrette over the top.

Steps:
- Cook couscous according to package directions, eliminating butter and salt.
- Melt half of the butter in a non-stick pan over Medium-High heat.
- Pat scallops dry with paper towels and season to taste with pepper.
- Add half of the scallops to the pan, cooking until opaque throughout and golden brown on the surfaces, about 2-3 minutes per side.
- Remove scallops, cover and keep warm.
- Heat remaining butter, cook the rest of the scallops and remove.
- Add orange juice to the pan and cook until reduced by about half.
- To serve, divide couscous among four plates.
- Pour orange juice equally over couscous on each plate.
- Top with scallops and garnish with orange segments and scallions.

Steps:
- Start on the rice, prepare as standard.
- Heat up olive oil in medium sauté pan at a medium flame.
- Sear scallops on both sides until lightly browned.
- Add your chopped onions, garlic & mandarin oranges and stir while cooking for 1 ½ minutes.
- Then add sweet vermouth and reduce to a low flame.
- Add mandarin juice, shallots, and wedge of lemon and let stand for 1 minute.
- Add cold butter and stir for 2 minutes.
- Add a touch of Salt, Pepper and Parsley to taste.
- Serve and Enjoy!

- Make clarified butter (see my tutorial). Clarified butter does not burn as easily as regular butter so it’s the best choice for searing scallops beautifully.
- The reason why we brine scallops is for adding a flavor and removing the chemical taste. Combine the salt with the boiling water in a large bowl, stirring to dissolve the salt. Then add cold water.
- Heat the clarified butter in a large stainless steel frying pan over medium-high heat until it begins to smoke. You can create a more beautiful caramelized exterior using stainless steel pan than a non-stick pan. If you use regular butter (instead of the clarified butter), melt the butter over medium heat. Add the scallops in a single layer, leaving enough space between each scallop (If necessary, cook in 2 pans or in 2 batches). To prevent oil splatter, you can use this oil splatter guard.

- To prepare the roasted red pepper sauce, place all of the ingredients into the bowl of a food processor, and process for a few minutes until completely smooth; pour the sauce into a squeeze bottle or spoon into a serving dish, and keep room temp or in the fridge. (Any unused portion will last for a couple of weeks in the fridge, and is delicious over chicken, beef, shrimp, or veggies.)
- To sear the scallops, place a large cast-iron or other heavy bottom skillet over medium-high heat, and add in the avocado oil and the clarified (or regular) butter; once melted and the skillet it very hot and pretty much smoking, season the scallops with some sea salt, and working in batches if necessary, place the scallops larger flat-side down into the skillet.
- Do not disturb the scallops for about 2 1/2 minutes, allowing that first side to get a nice, deep brown char; then, flip the scallops over and allow them to sear, undisturbed, on that second side for about 1 1/2 minutes, or until a golden crust forms on that side and the scallops are medium-rare and slightly firm yet tender when gently pressed.
- Remove the scallops from the skillet and place onto a large platter to hold. Repeat with another batch, if necessary.
