SEASONED BAKED COD
Quick and good. Great to throw in the oven after a long day. I use DiB's recipe for Old Bay Seasoning #15562.

Steps:
- Preheat the oven to 350°F Lightly coat 4 squares of aluminum foil with cooking spray.
- Place a cod fillet on each piece of aluminum foil. Squeeze a lemon wedge over each fillet, and sprinkle each with 1/2 teaspoon Old Bay seasoning.
- Wrap the aluminum foil around the fish. Place in the oven and bake until the fish is opaque throughout when tested with the tip of a knife, 30 to 40 minutes. Serve immediately.
COD FILLET WITH ROASTED VEGETABLE RAGOûT
Steps:
- Preheat oven to 500°F.
- Season cod with salt and pepper. In a large shallow baking pan toss zucchini, tomatoes, onions, bell pepper, garlic, and thyme with oil and salt and pepper to taste and spread in one layer. Roast vegetables in middle of oven 20 minutes, or until they begin to brown. Arrange fish over vegetables and roast 7 minutes, or until it just flakes with a fork.
- While vegetables and fish are roasting, in a small skillet toast bread crumbs with parsley and salt and pepper to taste over moderate heat, stirring, until golden, about 5 minutes.
- Transfer fish carefully to a plate and keep warm, covered. To vegetables add water, soy sauce, lemon juice, and Worcestershire sauce and stir to loosen brown bits from bottom of pan and break up tomatoes. Divide ragout among 4 plates and top with fish and bread crumbs.

Simple, fast, and delicious describes this baked cod recipe. Bake for two sets of 10 minutes each and you have the perfect ten dinner! This recipe was a favorite request from a local restaurant. They closed after years in business and we are happy to share a version of their most requested recipe. I serve this with rice pilaf and fresh spinach that has been lightly seared in olive oil and garlic. Yummy!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place 2 tablespoons butter in a microwave-safe bowl; melt in microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.
- Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven.
- Coat both sides of cod in melted butter in the baking dish.
- Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, wine, and cracker mixture. Place back in oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes.
- Garnish baked cod with parsley and green onion. Serve with lemon wedges.

Need a change from boring, basic fish? My family loves this recipe. I have been told it is "to die for". I have made it several times (changing the type of fish fillets). My favorites are salmon and walleye. 2 lbs of fillets is an estimate. You will need enough fish to line the bottom of a 9 by 13 cake pan.

Steps:
- Sautee onions and mushrooms in butter.
- Add some Lawry's Seasoning Salt.
- Sautee until onions are tender and transparent.
- Add the soup, cheeses, salt & pepper to taste, Lawry's Seasoning to taste, garlic powder to taste, basil, crab, milk or wine.
- Simmer until creamy.
- Line fish in a single layer in a greased 9 by 13 pan.
- Sprinkle some salt on the fish.
- Pour cheese mixture over the fish.
- Sprinkle enough crushed crackers to cover the sauce.
- Top off by sprinkling grated parmesean cheese over the top.
- Bake uncovered in a 350 degree oven for 30 to 40 minutes(or until fish flakes with a fork).
- Serve immediately.

SEASONED CRUNCHY COD FILLETS IN THE AIR FRYER

- Create a foil sling in the bottom of a basket-style air fryer, going across the bottom of the basket and up the sides, about 3 inches. Poke a few holes in the bottom of the foil sling, to match the holes in the basket. Spray the sling with avocado oil. If using a shelf-style air fryer, omit this step.
- Combine panko crumbs, yellow cornmeal, seasoning blend, paprika, and salt in a small bowl. Pour buttermilk into a second bowl.
- Pat cod fillets dry with paper towels and lightly dust both sides with flour. Dip each flour-coated fillet into the buttermilk, then turn in the crumb mixture. Pat the crumb mixture on all sides of each fillet and place on the foil sling, if using. Place on the rack of a shelf-style air fryer. Spray each cod fillet with avocado oil.
- Cook in the air fryer until the fish flakes easily, 10 to 12 minutes. Use the sling to remove cod fillets from the air fryer and serve immediately.
