- Place potatoes on a foil-lined baking sheet. Bake at 450° for 8 minutes. Combine remaining ingredients; sprinkle over potatoes and mix gently. Bake until the potatoes are browned and crisp, 4-5 minutes longer.

- Toss half a 28-ounce bag frozen crinkle-cut fries with 1 tablespoon olive oil and 1/4 teaspoon each kosher salt, pepper, garlic powder, onion powder and paprika. Spread on a baking sheet and bake at 425˚ until crisp, about 30 minutes. Heat 1/2 cup half-and-half in a saucepan over medium heat until steaming; add 4 ounces diced sharp cheddar cheese and 2 diced slices American cheese. Cook, whisking, until smooth. Whisk in 1/2 teaspoon Worcestershire sauce. Season with salt and pepper. Serve with the fries.
CHEESE FRIES WITH ULTIMATE DIPPING SAUCE
If you ever have the opportunity to eat at the Training Table in Salt Lake City, ordering their famous Cheese Fries with Ultimate Dipping Sauce is a must! There is nothing complicated about the recipe; all you need is piping hot french fries, shredded cheddar cheese, a really good hickory flavoured BBQ sauce and mayo.

Steps:
- Heat approximately 3 or 4 inches of oil in a deep fat fryer to 370 degrees F.
- While the oil is heating, peel potatoes and cut into strips using a French fry cutter.
- Place potato strips in ice water to remove excess starch.
- Completely dry potato strips using paper towels.
- Divide potatoes into two batches.
- Fry each batch in hot oil until golden brown; approximately 5 to 6 minutes/batch.
- While the French fries are cooking, make the Ultimate Dipping Sauce by pouring the mayonnaise on one side of a small serving bowl and the BBQ sauce on the other side of the serving bowl. DO NOT mix the mayonnaise and the BBQ sauce; mixing it with the French fries is part of the experience.
- Remove cooked fries with a slotted spoon and place on paper towel to remove excess oil.
- Remove paper towel from plate.
- Sprinkle grated cheddar cheese on piping hot French fries.
- Serve immediately, but allow the cheese to melt before serving. You may want to place under the broiler for a minute - just until the cheese melts; DO NOT let the cheese bubble and crust over!
- Dip the cheese fries into the Ultimate Dipping Sauce making sure you get a little bit of mayonnaise and a little bit of the hickory flavoured BBQ sauce.

- Preheat oven to 500 degrees F.
- Place potato wedges on a cookie sheet. Drizzle with just enough oil to coat. Season with Italian dried seasoning, salt and pepper. Roast potatoes and turn after 15 to 20 minutes. Sprinkle cheese liberally on potatoes and roast another 10 minutes, serve.
CHRISTINA'S STEAK FRIES WITH CHEESE SAUCE

- To make the fries: Peel the potatoes and cut into desired French-fry size. Put into a bowl of ice water and let stand for 10 minutes.
- Meanwhile, to make the cheese sauce: Combine all ingredients in a small saucepan over medium heat and cook, stirring, until melted and smooth. Remove from heat and set aside.
- Heat shortening in a large pot, deep skillet or deep-fat fryer. Drain potatoes and dry thoroughly. Working in small batches, fry the potatoes until golden brown, about 10 minutes. Using a slotted spatula, transfer fries as they cook to a brown paper bag. Add the salt, pepper, and Parmesan and shake to coat well. Serve immediately with the cheese sauce.

- Preheat oven to 425. Grease large baking pan.
- Combine parmesan cheese and rest of seasonings into a large resealable plastic bag.
- Combine potatoes and oil in bowl,stir well, covering all potatoes in oil.
- Add potatoes to bag with seasonings. Shake to coat all.
- Arrange potatoes in pan (single layer for faster cooking)bake for 10 minute.
- Turn over potatoes and bake for another 10 minute.
SPICED FRIES SIX WAYS WITH DIPPING SAUCES
Steps:
- For all recipes, preheat two baking sheets at 450 degrees F on the top and bottom oven racks. Add spices to a 32-ounce bag of frozen fries and spread on the hot baking sheets. Bake as directed, switching the pans halfway through.
- Moroccan Fries: Toss the fries with 2 tablespoons olive oil, 2 teaspoons ground cumin, 1 teaspoon ground coriander, 1/2 teaspoon ground ginger and 1/4 teaspoon each ground cinnamon and cayenne; bake. Sprinkle with chopped cilantro.
- Cumin Ketchup: Toast 1 tablespoon ground cumin in a small dry skillet. Let cool, then mix with 1/2 cup ketchup, 3 tablespoons apricot preserves and a dash of hot sauce.
- Caraway-Dill Fries: Toss the fries with 2 tablespoons olive oil, 2 teaspoons each dried dill and ground caraway and 1/2 teaspoon mustard powder; bake.
- Pickled Mayo: Combine 1/2 cup mayonnaise, 1/4 cup chopped dill pickle and 2 tablespoons deli mustard.
- Celery Salt Fries: Toss the fries with 2 tablespoons olive oil, 1 tablespoon smoked paprika and 1 teaspoon celery salt; bake.
- Bloody Mary Ketchup: Combine 1/2 cup ketchup, 2 tablespoons horseradish, the juice of 1/2 lemon, 2 teaspoons Worcestershire sauce anda dash of hot sauce.
- Jerk-Spiced Fries: Toss the fries with 2 tablespoons olive oil and 2 tablespoons jerk seasoning; bake. Sprinkle with thinly sliced scallions.
- Chutney Mayo: Combine 1/2 cup mayonnaise, 1/4 cup mango chutney, the zest and juice of 1 lime and a dash of hot sauce.
- Chipotle Fries: Toss the fries with 2 tablespoons olive oil, 1 tablespoon smoked paprika and 1 teaspoon chipotle chile powder; bake.
- Smoky Barbecue Sauce: Combine 1/2 cup barbecue sauce, 1 to 2 tablespoons adobo sauce (from a can of chipotles) and 2 tablespoons pure maple syrup.
- Garlic-Parmesan Fries: Toss the fries with 2 tablespoons olive oil and 1 teaspoon granulated garlic; bake, sprinkling with 1/2 cup grated parmesan during the last 5 minutes. Sprinkle with chopped parsley.
- Herb-Anchovy Mayo: Pulse 1/2 cup mayonnaise, 1/4 cup each basil and parsley, 2 teaspoons dijon mustard, 2 anchovy fillets and 1 small crushed garlic clove in a food processor until smooth.

- Put the fries in a large bowl and drizzle with the oil. Sprinkle with the onion powder, garlic salt and pepper and toss to coat.

HOMEMADE CRISPY SEASONED FRENCH FRIES

So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

- Peel and cut potatoes into long thin strips.
- In a large bowl combine water, sugar and corn syrup.
- Add potatoes to bowl and soak for 30 minutes.
- In a separate bowl mix potato starch, flour and milk.
- Remove potatoes from water, and coat evenly in potato starch,flour,milk mixture.
- Season potatoes with salt,pepper,paprika,garlic &onion powders and bouillon.

MONTREAL SEASONED OVEN FRIES
This is a recipe I litally threw together in a pinch to accompany burgers flavored with montreal steak seasoning. The fries turn out tender on the inside and crispy on the outside with the flavors of montreal steak seasoning. Please be warned, though, that these are lightly salty. DH and I enjoy a bit of saltiness, so that wasn't a problem for us.

- Soak cut potatoes in cold water for 10 minutes. Drain and pat dry with paper towel then transfer to large bowl.
- Add remaining ingredients except salt, toss well to combine.
- Meanwhile, line a large baking sheet with foil. Place baking sheet in oven, preheat oven and baking sheet to 375 for 10 minutes.
- Remove preheated baking sheet from oven, pour fries onto baking sheet (being careful not to burn yourself baking sheet will be hot). Arrange fries in a single layer.
- Bake for 45 minutes, raise temperature to 425 and bake for another 10 minutes until golden and crispy.
- Remove from oven and immediately sprinkle with salt (this step is optional but I highly recommend it).
- Note: You can flip the fries half way through the cooking process if you'd like. But I don't feel it's necessary, so no flipping here!
