SEASONED WILD RICE (COOKED IN A RICE COOKER)
I love wild rice. It has such wonderful nutty flavor. I made this in my rice cooker and it came out perfect. The rice cooker cook book suggested 6 cups of liquid, but I only added 5 and I like the texture with less.

Steps:
- Put the rice, chicken broth, coconut oil and Spike into the rice cooker. Give it a good stir.
- Turn on the rice cooker and let it cook the rice. I used coconut oil to prevent the rice from bubbling over. It works very well and I like that coconut oil doesn't go rancid like other oils when heated on a high temperature.
- When the rice is finished, lift the lid and fluff it up. Put the lid back on and let it sit for another 5-10 minutes before serving. This goes really good with a little Romano cheese on top.

Can't get get any easier than this. I never go wrong with rice in the cooker. You can have it ready and warming to use in any recipe. I use the same recipe for white and wild rice.

- Rub with butter or spray rice cooker pan with nonstick cooking spray.
- Add water or stock, rice, and salt to taste.
- Cover and cook about 40- 50 minutes, or until rice is fluffy.
- Let stand 10 minutes more before serving.

- In a large saucepan over medium heat, saute the onions in butter until tender, about 5 minutes. Add rice; cook for 8-10 minutes. - In small bowl, blend all seasoning ingredients. Set aside.
- In medium saucepan, bring water to a boil.
- Add margarine, brown rice & wild rice, and reduce heat. Cover & simmer 30 minutes.
- Water should be about half absorbed and brown rice beginning to soften.
- Stir in seasoning mix. Simmer additional 20-30 minutes.
- Let sit, still covered, 10 minutes.
- Mix in fresh parsley and fluff with fork before serving.
