BLACKBERRY COBBLER
For a taste of the frontier, bake Ree Drummond's Blackberry Cobbler from The Pioneer Woman on Food Network; it's perfect served warm with cold ice cream.

- Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
- In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
- Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. Bake until golden brown and bubbly, about 1 hour. When 10 minutes of the cooking time remains, sprinkle the remaining 2 tablespoons sugar over the top. Top with whipped cream or ice cream . . . or both!
GRANDMA'S BLACKBERRY COBBLER
This is my grandma's recipe, and I have found none that compare. I always make it with blackberries, but you can use any fruit you want.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Whisk 1 1/2 cups sugar, cornstarch, and a pinch of salt together in a small bowl; set aside.
- In a separate bowl, whisk the flour with 1 1/2 cups sugar, baking powder, and another pinch of salt. Mix in the softened butter until the mixture resembles cornmeal, then stir in the milk until moistened. Spread the blackberries into a 9x13-inch baking dish, and spoon the batter evenly over top. Sprinkle with the cornstarch mixture, then pour the boiling water over top.
- Bake in the preheated oven until the mixture is bubbly, and the topping is golden brown, 40 to 45 minutes.

BLACKBERRY COBBLER
Steps:
- Preheat oven to 350 degrees F.
- Into a buttered shallow baking dish place blackberries. Sprinkle with 1/3 cup sugar.
- In the bowl of a food processor combine flour, baking powder and salt. Add butter and pulse to create lumpy mixture. Add cream and pulse until dough forms. Dough will be soft. Spoon dough over blackberries.
- Melt remaining 2 tablespoons butter and drizzle over mounds of dough. Sprinkle with remaining 1/3 cup sugar.
- Bake about 30 to 40 minutes or until dough and fruit are cooked through and dough is lightly browned.
- Serve with whipped sweetened cream.
BEST BLACKBERRY COBBLER

- Place the blackberries in a large bowl. Combine the sugar, cornstarch and lime zest; sprinkle over berries and gently toss to coat. Pour into a greased 9-in. square baking dish., In a large bowl, combine the flour, 2 tablespoons sugar, baking powder, salt and baking soda; cut in 5 tablespoons butter until crumbly. Combine sour cream and heavy cream; gradually add to crumb mixture, tossing with a fork until mixture forms a ball. , Roll out to fit top of baking dish; place pastry over filling. Trim and seal edges; cut slits in top. Melt remaining butter; brush over pastry. Sprinkle with remaining sugar., Bake, uncovered, at 375° for 30 minutes. - In a large saucepan, combine the blackberries, sugar and cinnamon. Cook and stir until mixture comes to a boil. Combine cornstarch and water until smooth; stir into fruit mixture. I grew up eating this cobbler, which is more cake-like. This recipe came from Mrs. Roach, who was like a grandmother to me. I remember picking dewberries and eating more than I picked. My fingers were always purple and I got my share of thorns, too.

- Mix dewberries with 2 tbls flour and 2 tbls of sugar. Pour mixture into a greased 13x9 pan.
- Mix together Cobbler ingredients and pour over berries.
- For Posypka Topping mix all ingredients together until mixture resembles coarse meal. Sprinkle over top of cobbler. Add as little or as much as you like.
- Bake at 350 for 30-40 minutes.

- Mix together all ingredients except berries just until blended and pour into pan.
- Pour berries on top of batter (they'll sink in).
- You can sweeten the berries with a little Splenda if they are very tart.
- If you are using frozen berries, let them semi defrost.
- Bake 40-50 minutes, or until golden brown.
