SESAME LIME STEAK WRAPS

Thinly sliced beef is marinated in an Asian inspired lime-sesame sauce, cooked, then wrapped in tortillas with red leaf lettuce.

Sesame Lime Steak Wraps image

Steps:

  • Place sliced beef in a shallow bowl. In a jar, combine lime juice, honey, oil, sesame seeds, soy sauce, sesame oil and grated ginger. Seal lid tightly, and shake until well combined. Pour over beef, and marinate 30 minutes.
  • Heat a nonstick skillet until very hot. Pour beef and marinade into pan, and saute on high heat until steak is evenly brown. Remove beef with a slotted spoon. Continue boiling marinade until reduced by half, stirring frequently to prevent burning, about 5 minutes. Put steak slices back into marinade, mix well, and set aside to cool slightly.
  • Place lettuce leaves on tortillas, and evenly distribute steak slices between all tortillas. Fold bottom of tortilla up by 1/3, then tightly roll from the side until wrapped.

  • In a large nonstick skillet coated with cooking spray, saute beef, pepper and 2 tablespoons soy sauce in 2 teaspoons oil until meat is no longer pink. Remove and keep warm. , Saute the onion and garlic in remaining oil for 1 minute. Stir in the red peppers, wine and remaining soy sauce; bring to a boil. Return beef to the pan; simmer for 5 minutes or until heated through. , Spread ranch dressing over one side of each tortilla; sprinkle with lettuce, tomato and green onions. Steps:

  • Heat oil in a large frying pan. When the pan is really hot, tip in the beef and pepper, then cook for a few mins until lightly browned and the beef is cooked through.

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl.   • Start by prepping your produce. Trim and thinly slice scallions. Thinly slice cucumbers and radishes and pick cilantro leaves from the stems. Mince garlic and wash and cabbage removing leaves and setting them aside to dry.
  • In a small bowl, make your quick pickles by combining cucumbers, radishes, rice wine vinegar and sugar. Mix to combine and set aside in the refrigerator until ready to serve.
  • In a large sautee pan add a drizzle of sesame oil, scallions and cabbage. Sautee until softened about 4-5 minutes. Add beef and minced garlic and cook breaking up the beef with a wooden spoon until you have a nice crumble and the meat is fully cooked about 4-5 minutes. Season generously with salt and pepper and stir in the remaining 2 teaspoons of sesame oil. Remove from heat.
  • To assemble your tacos, fill cabbage leaves with ground beef mixture and top with a few pickled cucumbers and radishes, some fresh cilantro and a drizzle of chili sauce (if desired.) Eat and enjoy!
