SIMPLY SPLENDID RICE PUDDING
This recipe is posted for a Recipezaar member who is looking for an eggless, baked rice pudding. It's untried by me, but it sounds good so I'll likely try it soon! I found it in Rose Murray's cookbook, "Hungry For Comfort: The Pleasures of Home Cooking" (which, incidentally, is a great book). This is what Rose Murray says about this recipe: "Risottos seem to have replaced the old-fashioned rice pudding as modern comfort food, but I think that the traditional baked rice pudding should be revived since it is so easy to make and provides the same wonderfully creamy texture as an upscale risotto."

Steps:
- Preheat oven to 300F; have ready a greased 8-cup baking dish (preferably glass, says Rose Murray).
- Heat the milk in a large saucepan over medium-high heat just until bubbles appear around the edge; remove from the heat.
- Add all the remaining ingredients to the milk, combine well, then pour into the prepared pan.
- Bake in preheated oven for two hours, until rice is just tender and most of the milk has been absorbed; stir twice during the first hour of baking.
SIMPLE CHIA SEED PUDDING
This is a super easy base for a tasty, nutritious breakfast-just soak the chia seeds in plant-based milk overnight and they take on a sumptuous pudding-like consistency by the morning! Flavor it as you desire. I like to use ground cinnamon and maple syrup, but smashed banana and grated apple are tasty, too.

- Add the chia seeds, milk, maple syrup and cinnamon to a bowl and whisk together with a fork for a couple of minutes so they are well combined and evenly distributed.
- Cover and place in the fridge to chill overnight. By the morning it will have set into a pudding. I use this as a base for my breakfast bowl, topped with homemade granola, lime-coconut yogurt and minted berries.

- 1. Arrange the racks in upper and lower thirds of the oven and preheat the oven to 375°F. Get out 2 large cookie sheets and line with parchment paper. Place some white sugar sprinkles in a small bowl.
- 2. Prepare dough: Cream the butter and sugar in the bowl of an electric mixer until fluffy, about 5 minutes. Add the vanilla, baking soda and salt and beat at medium speed until incorporated. Add the egg and beat until incorporated. Add the flours and mix at low speed until blended, scraping down the bowl once or twice.
- 3. Scoop up enough dough to form into a 1-inch ball, rolling between the palms until smooth. Roll the dough ball in sugar sprinkles and then place on the prepared baking sheet. Repeat, arranging a dozen coated dough balls evenly spaced on each sheet and then, using a drinking glass, press on dough balls to flatten to about 1/4 inch thick.
- 4. Bake cookies about 12 minutes, switching and rotating the pans half way through, until cookies are golden and somewhat firm to the touch. Transfer cookies with a metal spatula to racks and let cool completely. Repeat with remaining dough.

- Heat the oven to 150C/130C fan/gas 2. Wash and drain the rice. Butter a 850ml baking dish, then tip in the rice and sugar and stir through the milk. Sprinkle in the nutmeg and top with the bay leaf or lemon zest.
- Cook for 2 hrs or until the pudding wobbles ever so slightly when shaken.

- Heat the oven to 160C/140C fan/gas 3 and butter a 1.5-litre baking dish. Put the pudding rice, sugar, vanilla, milk and cream in a bowl and stir to combine. Pour the mixture into the prepared dish and grate over a generous layer of nutmeg. Bake for 1 hr 30 mins until a brown skin has formed on top and the rice is cooked and tender.
- Leave to cool slightly, then scoop the warm pudding into bowls and serve with a dollop of jam on top.
