THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Steps:
- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.
SLOPPY GOAT
Growing up we ate "Bar-b-que" quite often and it came as a shock to me when I discovered that what we called Bar-b-que most called "Sloppy Joes"! I guess I can thank my Grandmother not only for the recipe but also for our PA Dutch roots that named our dish. I was diagnosed with a condition called "Gastroparesis" as an adult and as a result had to drastically change my diet, part of it meaning hunting for a meat that is very low in fat, easy to digest and high in essential nutrients and I found goat meat. At first I was scared... we are talking "goat" here, but I braved it and got some ground goat and used it to make our old family favorite. Not only did it taste great, but it was very gentle on my paralyzed digestive tract! In deference to the rest of the nation I have renamed out PA Dutch Bar-b-que as a Sloppy Joe and am sharing with you the version made with ground goat. (You can, of course, use any ground meat in this recipe, but if you are brave enough to try goat you will get a pleasant suprise and your heart will thank you!)

Steps:
- Brown the goat with the diced onion, salt and pepper in a saucepan over medium low heat until cooked through. **Stir constantly since meats very low in fat cook faster and burn easily**.
- Add the katsup, mustard, vinegar and sugar and stir to combine then turn the heat down to low and heat through for 5-10 minutes while stirring.
- Spoon onto Hamburger buns and enjoy.

SLOPPY JOES
Sloppy joes are a simple, American staple the whole family can get stuck into. Add a dash of spicy chipotle or smoky barbecue sauce to the minced beef filling for some zing.

- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
- Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

CURRIED GOAT

- Put the goat in a large mixing bowl and add all the ingredients except the oil, carrot, potato and chilli. Rub everything into the meat until well coated. Put in the fridge to marinate for at least 1 hr or overnight.
- Heat the oil in a large heavy-bottomed pan over a medium to high heat and add the meat. Stir until browned on all sides. Pour in enough hot water to just cover the meat (about 800ml). Put the lid on and allow to simmer over a low heat for 2 hrs, or until the meat is soft and tender. Keep checking and stirring every 30 mins and add a little more water if it reduces too much, to prevent the pan from drying out.
- For the last 30 mins of cooking, add the carrots, potatoes, and chilli. Remove the lid and simmer for a little longer to thicken, if you like. Stir and season to taste, then scatter over some extra spring onion.
