  • In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
  • Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.

Steps:

  • Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. Serve with your favorite sides or sliced tomatoes seasoned with salt and pepper, dill pickles and Deviled Potato Salad. Have plenty of napkins on hand!
  • Boil potatoes in water seasoned with coarse salt until they are tender, about 10 minutes. Drain cooked potatoes and return to the warm pot to dry them out. Let the potatoes stand 2 minutes, then spread potatoes out on to a cookie sheet to quick-cool them.
  • In the bottom of a medium mixing bowl, grate 1/4 onion using a hand grater. Add mustard and mayonnaise, paprika and cayenne pepper sauce to the grated onion and stir to combine. Add potatoes to the bowl and stir to evenly distribute dressing. Season potato salad with salt and pepper and taste to adjust your seasonings. Top servings of salad with chopped scallions.

1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 1/4 pounds ground beef sirloin

5 all-purpose potatoes, peeled and diced

1/2 cup mayonnaise, eyeball the amount
1 teaspoon sweet paprika
1 teaspoon hot cayenne pepper sauce (recommended: Tabasco or Frank's Red Hot)
Salt and freshly ground black pepper
2 scallions, thinly sliced, for garnish

THE BEST SLOPPY JOES

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

2 tablespoons unsalted butter

  • Add to a cast Iron Dutch oven a splash of olive oil. Season the Bone-in short ribs with salt and pepper and sere for 2-3 minutes on each side, we are looking for some char here so don't panic. Remove to a paper towel lined cooling dish. At this point you can preheat your oven to 325.
  • Now let's layer some flavors for the sauce. In the same pot add the onions and garlic; allow these to sweat for 3-4 minutes or until glossy. Add the Smoked Paprika, Chili Powder, Cumin and Coriander; cook this for about 2 minutes until it smells fragrant. Add the tomato paste, let this bubble until slightly browned 2-3 minutes; this will give us a nice earthy smoke flavored sauce. Next, add the Cola and Beer (there will be extra beer you know what to do) add the Ketchup and the soy sauce and bring to a simmer until it thickens up, around 3-5 minutes.
  • Now it's time to put the Ribs back inches Add the chicken broth and bring to a simmer for about 5 minutes. Put the lid on that bad boy and slide it into the oven for 3 hours. What emerges from the oven will be molten tender goodness. Pull the ribs form the lava mixture and allow to cool a bit then shred ala pulled pork. At this point it is a good idea to spoon out some of the fat that has rendered from the beef. Place the shredded Beef back into the Dutch oven, bring to a simmer and serve with your favorite roll and coleslaw if desired.

Steps:

  • Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.

  • Spread the onion, celery, and bell pepper evenly on the baking sheet. Drizzle the olive oil over them and drop the tablespoon of tomato sauce on the baking sheet. Lightly toss the veggies with the tomato paste (the oil will help it spread around) until they are evenly coated.
  • Carefully slice off the very top of the garlic so that most of the cloves are exposed. Drizzle a 1/2 tablespoon of olive oil over the top and then wrap the garlic in tin foil.
