SLOW COOKER ROAST BEEF IN ITS OWN GRAVY

This is my go-to recipe for pot roast on a busy weekday. It uses inexpensive cuts of meat, made posh by the slow cooker. After years of tweaking others' recipes, I think I found a good mix of high-quality pot roast while still being very quick and easy.

Slow Cooker Roast Beef in its own Gravy image

Steps:

  • Arrange potatoes, carrots, and onion around the edges of a 5- to 6-quart slow cooker.
  • Whisk celery soup and beef stew seasoning mix together in a bowl until smooth and creamy.
  • Heat a saucepan over medium-high heat; cook roast until browned and seared, about 3 minutes per side. Sprinkle onion soup mix over entire roast and place roast in the center of the slow cooker, surrounding it with the vegetable mixture. Spread celery soup mixture over roast.
  • Cook on Low, 8 to 10 hours.
  • Remove roast from the slow cooker and place on cutting board; let rest for 10 minutes.
  • Strain remaining liquid in the slow cooker into a bowl and whisk until smooth, about 1 minute.
  • Slice roast and serve alongside vegetables and gravy.

Beef Roast with Bacon-Green Chili Gravy image

Steps:

  • 1. Cook bacon in 12-inch nonstick skillet over medium heat. Cook until brown and crisp: remove to paper towel.
  • 2. Sprinkle roast with garlic pepper. Cook beef in bacon fat over medium heat for 5 to 6 minutes turning until brown on both sides.
  • 3. Spray a 4 to 5 quart slow-cooker. Place beef in cooker. Top with bacon and carrots. Mix green chilies, broth, chili sauce, and flour in small bowl; pour over beef.
  • 4. Cover and cook on low heat setting for 10 to 12 hours.
  • 5. Place beef on platter. Stir gravy in cooker and serve with beef.

Steps:

  • Cook bacon in 12-inch nonstick skillet over medium heat, stirring occasionally, until brown and crisp; remove from skillet with slotted spoon and drain on paper towels. Reserve bacon fat in skillet.
  • If beef roast comes in netting or is tied, do not remove. Sprinkle beef with garlic pepper. Cook beef in bacon fat in skillet over medium heat 5 to 6 minutes, turning occasionally, until brown on both sides.
  • Spray 4- to 5-quart slow cooker with cooking spray. Place beef in cooker. Top with bacon and carrots. Mix green chiles, broth, chili sauce and flour in small bowl; pour over mixture in cooker.
  • Cover and cook on Low heat setting 10 to 12 hours.
  • Place beef on platter; remove netting or strings. Stir gravy in cooker; serve with beef.
