MOTHER'S POT ROAST
The best vegetable gravy you ever tasted--and the roast isn't bad either! We always had this meal with mounds of mashed potatoes. Great on a cold wintry evening!

- Spray slow cooker with non-stick cooking spray. Season roast with salt and pepper. Place meat in pot with fat side up. Pour tomato sauce over roast. Place onion rings over all. Toss in bay leaves. Cover and cook 1 hour on high.
- After 1 hour, reduce heat to low and cook 6 to 8 more hours. Carefully lift meat out of pot and remove to a warm platter.
- Pour drippings through strainer into medium-sized saucepan and discard material in strainer. Whisk in flour to liquid. Cook, stirring constantly over medium heat until thickened. Season to taste with salt and pepper; serve alongside roast.

SLOW COOKER POT ROAST
Taking the time to make a smooth, thick gravy for this slow-cooked dinner is worth it. As the pot roast cooks, the water and juices from the vegetables and meat will thin the gravy out, creating just the right consistency.

- Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
- Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
- Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
- Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.
SLOW COOKER POT ROAST WITH TOMATO-BASED GRAVY RECIPE

- Preheat a large saute pan over medium-high heat. ◾Place the flour in a shallow bowl and coat the beef, making sure that the flour adheres to the beef and any excess falls off. ◾Add the canola oil to the saute pan once hot and then add the beef. Brown on all sides, for 10-15 minutes total, flipping carefully after 7-8 minutes. Remove the roast from the pan, keeping the stove on. ◾Add the onion, carrots and celery. Sprinkle with salt and black pepper and saute until cooked through and tender, about 8 minutes. Add the garlic and cook for an additional minute. Remove the pan from heat. ◾Heat your slow cooker to low (if you are cooking for 7-8 hours) or high (if you are cooking for 3-4 hours). Add the sautéed veggies to the slow cooker. Add the tomatoes, beef broth, red wine, thyme, rosemary, oregano, parsley and granulated sugar. Sprinkle with salt and pepper. Stir to combine. Add the beef to the slow cooker and cover. Cook for 7-8 hours on low or 3-4 hours on high. ◾When the beef has cooked, remove the beef from the slow cooker and cover with foil, leaving the slow cooker on. Increase the setting to high, if not set to it already. Add the cornstarch and water mixture to the slow cooker with the sauce and whisk to combine. Continue to whisk until the sauce has thickened substantially, about 2-3 minutes. If you find that the gravy isn't thick enough for you, feel free to add more cornstarch mixture until you reach the consistency you desire. ◾Serve the beef with the gravy and enjoy!
SLOW COOKER ROAST
A wonderful roast beef slow cooker recipe that makes it own delicious gravy while the beef and veggies are cooking. Try also with dry onion-and-mushroom soup mix in place of the onion for added flavor. Feel free to change the vegetables to make the dish to the liking of you and your family. You can add sliced mushrooms, sliced sweet onion or pearl onions, whatever strikes your fancy. I found a good ratio is 3 cubed potatoes and about 2 handfuls of additional vegetables.

- Heat olive oil in a skillet over medium-high heat. Sear roast in hot oil until browned completely, about 2 minutes per side.
- Spread potatoes into the bottom of the slow cooker. Layer baby carrots atop the potatoes and green beans atop the carrots. Place the roast atop the layers of vegetables.
- Mix cream of mushroom soup, water, and dry onion soup mix together in a bowl; pour over the roast and vegetables.
- Cook on Low 8 to 10 hours.
