SMOKED BOURBON MARINATED BEEF ROAST

This is an oldie but goodie. Cooking times vary, depending on your grill and the size of your roast. I use my Weber Kettle mostly, but have used my gas grill also I find an instant read thermometer works best.. Plan ahead, this has to marinate 24 hours. The recipe is easily increased as the size of your roast depends on the number of guests.

Smoked Bourbon Marinated Beef Roast image

Steps:

  • Sprinkle roast with tenderizer. Place in large zip lock bag and set aside mix the remaining ingredients in a small bowl. Pour over roast and force as much air as possible out of bag and seal. Marinate in refrigerator for at least 24 hours. Remove from refrigerator and let sit for 1 hour to come close to room temperature.
  • While roast is resting, place wood chips of your choice in bowl of water to soak. Fill a large chimny with charcoal and let burn until a fine white ash forms on the outside of briquetts. Place a disposable aluminum pan in center to catch drippings and pile charcoal on each side and sprinkle wood chips over both piles. Place roast over pan and cover. Try to keep a medium temperature and check for doneness at regular intervals. "You know your grill".

This is a sure-fired winner with any beef lover. It takes a little while to prepare, so be patient, but trust me, you will love this. The recipe yields the most tender and flavorful meat imaginable, and also has great eye appeal.

Smoked Standing Rib Roast image

Steps:

  • Start at least 10 pounds of the charcoal in a torpedo style smoker. You need a fairly hot fire. Fill the secondary pan with cold water, and wait for the coals to turn white. Soak hickory chips in bourbon with enough water to cover. Rub the roast liberally with steak seasoning, being sure to coat all surfaces.
  • When the coals are ready, place the roast on the top grate. Throw a few handfuls of soaked hickory chips onto the fire, and close the lid. Check the fire every 45 minutes or so, adding more charcoal as needed to keep the fire hot. Every time you check the fire, add more wood chips. Cook for 8 to 10 hours, or to your desired doneness. Use a meat thermometer to check the roast. The meat tastes best when rare: 145 degrees F (65 degrees C), but cook to your liking.

Steps:

  • Preheat a smoker to 275 degrees F (135 degrees C).
  • Combine salt, pepper, garlic powder, and steak seasoning in a bowl. Rub mixture evenly over the roast and place in a baking pan.
  • Cook roast in the smoker until meat reaches an internal temperature of 165 degrees F (74 degrees C), 4 to 4 1/2 hours. Wrap roast in aluminum foil and continue smoking until meat reaches an internal temperature of 195 degrees F (90 degrees C), about 1 hour more.
  • Remove roast from smoker and let sit for 20 minutes. Leave smoker on.
  • Cut meat into cubes and return to the baking dish. Add barbeque sauce and brown sugar.
  • Smoke meat for 1 1/2 to 2 hours more.

This is awesome! If you love brisket or beef cooked in the smoker and just don't have time to, or maybe the weather won't permit- you have to try this. I have used EVERY cut of beef roast or brisket, it always comes out great! Enjoy!

Kelly's Crock Pot

Steps:

  • Trim beef of any large extra fat. A little is good for flavor.
  • Place the roast in the middle of a large piece of aluminum foil.
  • Rub beef all over with all of the spices.
  • Sprinkle liquid smoke over beef and rap tightly in foil. Make sure it's completely wrapped.
  • DO NOT ADD ANY LIQUID TO THE CROCKPOT!
  • Place in crock pot and cook on low setting for 8-10 hrs (10 for a larger cut of beef).
  • Unwrap beef and serve with the "smoker" juices in the crock pot or with your favorite barbecue sauce.
