SMOKED TURKEY AND SPRING PEA FETTUCCINE
This rich and creamy smoked turkey and spring pea fettuccine recipe is inspired by a pasta I learned long ago working at my first real chef job in San Francisco. There's just something very special about the way the creamy, slightly sweet, aromatic sauce pairs with the smoky meat.

Steps:
- Set a heavy skillet over medium heat and pour olive oil into the skillet. Cook and stir garlic and shallot in the hot oil until fragrant, about 30 seconds. Add smoked turkey to skillet; cook and stir until heated, about 1 minute.
- Pour heavy cream into the skillet and raise heat to medium-high; bring sauce to a boil. Season with salt, black pepper, and cayenne pepper. Reduce heat to medium-low and simmer until sauce has thickened slightly, about 5 minutes.
- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the fettuccine, bring back to a boil, and cook pasta over medium heat until cooked through but still firm to the bite, 7 to 8 minutes. Drain.
- Turn heat under cream sauce to low and stir in peas; toss fettuccine with sauce until coated. Mix in tarragon and lemon zest and cook until flavors have blended, about 1 minute. Adjust seasonings if desired. Serve in bowls and sprinkle each serving with about 3/4 teaspoon Parmigiano-Reggiano cheese for garnish.

I found this recipe in the Febuary/March 2003 issue of Taste of Home's Light and Tasty. I was very pleased with the results when I made it. The leftovers are even better. This comes out to 5 points for a 1 1/4 serving. Enjoy!

- Cook pasta.
- On another burner, in a large non-stick skillet saute the sausage, mushrooms, garlic, and basil in oil until mushrooms are tender.
- Drain pasta and add to the sausage mixture.
- Add tomatoes, salt, and pepper.

SMOKED SAUSAGE AND POTATOES
We make this all the time! I got the recipe from a website quite awhile ago, I don't remember where exactly. It is so simple. You just make it in your MICROWAVE! How great is that??? By the way...we prefer the skinless sausage but by all means use what you like.

- Cut potatoes into chunks and leave the skin on.
- Cut peppers into strips.
- Toss potatoes, peppers, garlic, rosemary and olive oil together and place in a microwave safe bowl.
- Cover and microwave on high 5 minutes, stir, re-cover, then microwave 5 more minutes on high.
- Add cut up sausage and microwave for another 5 minutes.
- Check potatoes for doneness and sprinkle with parmesan cheese if you'd like.
- Serve.

TURKEY SAUSAGE WITH BROCCOLI
I had to make something for a luncheon at work. I needed to feed a crowd and I was sooo busy that week that I needed something easy. So here it is. I did this in two days only because I didn't have enough time in one day. It is easy and quite delicious. This got great raves! It's a good party dish. Measurements might be a tad off. I'm the type of cook that just throws in.

Steps:
- Cut up onions and fry in olive oil till carmelized.
- As I said I did this the day before and put them in refrigerator.
- Just because of a time issue.
- If you make it all in one day carmelize onions and then put aside.
- Cut through the casing on the sausage and cut sausage into small pieces.
- Throw away casing.
- While olive oil is hot throw sausage in pan.
- Cut up your broccoli and throw in the pan.
- Add wine and 2 tablespoons of butter.
- About 15 minutes.
- While doing this boil your penne with some salt.
- I use Kosher salt.
- Once the penne is boiled and drained put in large pan.
- Then add broccoli, sausage and all your spices.
- Mix in the carmelized onions.
- Then add grated parmasean cheese.
- Mix well and have some on top.
- Bake for 15 minutes 350 oven.
- Everything is really cooked.
- You just want to heat it up.

- Preheat oven to 400 degrees F.
- Core the apples and dice them into 1-inch cubes. Dice the onion into 1/2-inch cubes.
- Over medium low heat, sauté the apples and onion in 1 tablespoon of the olive oil melted together with the unsalted butter. Cook for 10 minutes, until softened. Add the wine, cranberries, salt, and pepper, and let simmer for 5 minutes. Remove from heat and allow to cool; set aside.
- Over medium high heat in a large pan, heat the remaining tablespoon olive oil and add the turkey sausage removed from the casings. Cook until browned well, breaking the pieces up with a wooden spatula or spoon, about 8 to 10 minutes.
- In a large bowl combine the sautéed fruit/onion mixture, cooked sausage, chestnuts (whole or chopped), cornbread, and red pepper flakes (if using). Toss gently but well. Add the chicken broth and 3/4 cup of the Parmesan and toss again (may add another 1/2 cup broth if you feel the stuffing is too dry).
- Oil a large casserole dish (8.5 x 8.5 inch) with olive oil or pan spray, then pour stuffing into dish. Be gentle when spreading it in the pan, you don't want to smash the bread cubes.
- Sprinkle over the remaining Parmesan, and dot with the butter pieces.
- Bake in 400 degree F oven on middle rack for 45 minutes to 1 hour, until the top is golden brown.

- Preheat oven to 425 deg. Spray 2 12 cup muffin pans with no stick spray.
- Press hash browns into bottom and up sides of muffin cups. Gently brush with melted butter. Bake crusts 20 minutes. Reduce heat to 350 deg.
- In a medium bowl, whisk together eggs, half and half, dry mustard, salt and pepper, until well combined.
- Evenly divide sausage and cheese between all prepared crusts. Spoon egg mixture into each crust. bake 15 minutes. Cool in pan 5 minutes before removing.
- Garnish with fresh parsley, if desired.

- Process until smooth.
- Scrape the mix into a medium size bowl.
- Add the turkey and combine well with your hands until everything is evenly distributed.

TURKEY SAUSAGE
There are lots of turkey sausage recipes here on 'Zaar, I couldn't find any like this. This is the sausage recipe that I used to make when my daughter was little and had severe food allergies. The mixture needs to be refrigerated over night to blend the flavors. I still use it to this day.
