SMOKED GINGER CHICKEN WITH CARDAMOM, CLOVES AND CINNAMON

Smoked Ginger Chicken with Cardamom, Cloves and Cinnamon image

Steps:

  • Combine the cloves, cardamom and cinnamon sticks in a bowl, cover with cold water and soak for at least 1 hour and up to 4 hours.
  • Heat the oil in a medium saute pan over medium heat. Add the ginger and garlic and cook until soft, about 2 minutes. Add the mustard seeds and cook for 30 seconds. Add 1/2 cup water, the lime zest and juice and some salt and pepper. Bring to a boil and cook for 1 minute. Transfer to a blender and blend until a smooth paste, adding more water if needed. Let cool.
  • Rub the paste over the entire chicken, including under the skin. Cover and marinate in the refrigerator for at least 1 hour and up to 4 hours. Remove the chicken from the refrigerator 30 minutes before grilling.
  • Light a chimney starter filled with hardwood charcoal and allow to burn until all the charcoal is covered with a layer of fine gray ash. Build a single-level fire by spreading the coals evenly over the bottom of the grill. Add the soaked spices evenly over the hot charcoal, put the lid on the grill and allow the grates to heat up and the smoke to fill the grill, about 5 minutes.
  • Place the chicken, skin-side down, over the coals and cook until the skin is nicely charred. Flip, move to indirect heat, cover the grill and cook at about 375 degrees until an instant-read thermometer inserted into the thigh registers 165 degrees F, 40 to 50 minutes.
  • Remove the chicken to a cutting board and let rest 10 minutes before carving.

Steps:

  • Brown the chicken: Heat 2 large skillets over high heat. Add half of the oil to each. Arrange the chicken on a tray in a single layer and season with salt. Turn the pieces over and season the other side. When the oil begins to smoke lightly, carefully add the chicken, skin side down, to the skillets, leaving space between each piece of chicken. Reduce the heat to medium and allow the chicken to brown on their first side, 5 to 8 minutes. Resist the temptation to move or turn the pieces. Use metal tongs to carefully turn the chicken pieces to their second side and brown 3 to 5 additional minutes. Transfer the chicken pieces to a tray and set aside.
  • Prepare the garlic: Grate 6 of the cloves of garlic and set aside for the sauce. Cut the remaining 12 cloves in half lengthwise.
  • Make the sauce: In one of the skillets you cooked the chicken in, add the cumin and coriander and stir rapidly over medium-low heat to give them a quick toast, 10 to 15 seconds. Immediately add the onions and grated garlic. Season with salt and cook over medium heat, stirring frequently, until the onions turn light brown, 3 to 5 minutes. Add the cinnamon stick, pepper flakes, bay leaves and tomatoes. Allow the tomatoes to cook, breaking them apart with a spoon as they cook, 8 to 10 minutes, and then add 1 cup water.
  • Toast the garlic cloves: In the other skillet the you cooked the chicken in, arrange the garlic halves in a single layer in the cooking grease. Toast the garlic over low heat until golden brown and crisped, 10 to 12 minutes. Remove the garlic from the skillet, sprinkle with salt and drain on a kitchen towel.
  • Finish cooking the chicken: Arrange the chicken pieces, skin side up, in the sauce. Cover the skillet, keep the heat low and continue cooking until the pieces are cooked through, 25 to 30 minutes. Remove the cover and stir in the ginger, cream and vinegar. Cover and simmer 2 to 3 additional minutes.
  • Test the center of a thigh to make sure the chicken is cooked through. It should reach an internal temperature of 165 degrees F and the juices should run "clear," not pink. Remove and discard the cinnamon stick and bay leaves. Taste and adjust the seasoning. Top with the toasted garlic and serve immediately.

  • Heat 2 tablespoons vegetable oil in a wok or large skillet over high heat. Add chicken to the wok, and stir-fry until chicken is opaque on all sides, about 3 minutes. Remove to a plate.

  • Pound the chicken to 1/2 inch thickness. In a large resealable plastic bag combine the garlic, ginger, oil and lime juice. Seal bag and shake until blended. Open bag and add chicken. Seal bag and marinate in refrigerator for no more than 20 minutes.

  • In a large skillet or wok, stir-fry chicken in 1 tablespoon oil over medium-high heat for 5-7 minutes or until juices run clear. Remove chicken and set aside.   • Clean chicken breasts and dry well. In a shallow baking dish, combine the flour, cayenne pepper, paprika, salt, and pepper. Dredge chicken breasts in flour mixture to coat. Shake off excess. In a large skillet heat 1/4-inch vegetable oil over medium heat. Add chicken and brown well, about 2 minutes on each side. Remove from pan and set aside. Zesty Ginger Beer BBQ Pulled Chicken Sandwich image

Steps:

  • For the chicken:
  • In a medium saucepan place the ginger beer, Worcestershire sauce, ketchup, apple cider vinegar, hoisin sauce, spice powder, orange juice, garlic, lime juice, onion powder, brown sugar, salt, honey, and pepper. Bring to a simmer on low heat for 15 minutes or until thickened. Add chicken and keep warm.
  • For sweet potato bacon biscuits:
  • Preheat oven to 425 degrees F.
  • In a small skillet, caramelize onion with olive oil and sugar. In the bowl of a food processor combine flour, brown sugar, baking powder, baking soda and salt and pulse to combine. Add butter and pulse until it resembles coarse crumbs. Remove contents of food processor to a medium bowl. Fold in bacon and onion. Combine sweet potato puree and buttermilk. Pour into dry ingredients to form a soft dough. Place dough on a floured surface and pat into 1-inch thickness. Cut out biscuits with a 2-inch cutter and arrange in a buttered skillet and place into the preheated oven for 25 minutes or until golden brown. Allow biscuits to cool slightly before making sandwich.
  • To assemble:
  • Split biscuit in half. Place a generous 1/2 cup of barbeque chicken on the bottom half of the biscuit and top with other biscuit half.

Steps:

  • Heat the oil in a medium saute pan over medium heat. Add the ginger and garlic; cook until soft, about 2 minutes. Add the mustard seeds; cook 30 seconds.   • Combine the cardamom, cinnamon and cloves in a bowl. Cover with cold water and soak at least 1 hour and up to 4 hours.
  • Combine the red onion and 1 tablespoon salt in a bowl and let sit at room temperature 30 minutes. Rinse with cold water and drain well. Put the onion in a bowl and add the parsley and sumac.
  • Heat your grill to high for indirect grilling.
  • Drain the spices and add them evenly over the hot coals in a charcoal grill or to the smoker box of a gas grill. Put the lid on the grill and allow smoke to fill the grill, about 10 minutes.
  • Season the chicken on both sides with salt and pepper. Put the chicken, skin-side down, on the cooler side of the grill (indirect heat), close the cover and grill until the skin is lightly golden brown with faint grill marks, 22 to 25 minutes. Turn the chicken skin-side up, move to the hotter side of the grill (direct heat) and continue grilling until the skin is golden brown, 15 to 20 minutes. Flip the chicken once more and continue grilling over direct heat until the skin is golden brown and crisp and an instant-read thermometer inserted into the thigh registers 165 degrees F, about 8 minutes.
  • Remove the chicken to a cutting board, tent loosely with foil and let rest about 10 minutes before carving. Top the chicken with some of the onion-parsley relish.

This is a simple, one pot dish. Sorry, didn't time the cooking. I put in 30 minutes but it may take more or less depending on how much chicken is being cooked. I don't use it myself, but you can also add some sake to the dish as it cooks. Just a little note: I changed the soy sauce to low-sodium ... this runs a bit on the salty side using the regular shoyu. I haven't tried it with the change yet. May need to cut back on the shoyu too.

Steps:

  • Heat oil in large pot.
  • Add chicken and cook about 2 minutes. Stirring occasionally.
  • Add ginger. Continue cooking 3 minutes. Stirring occasionally.
  • Add all other ingredients. In adding the sugar: add some, mix, taste; repeat if needed -- too much makes it too sweet. It should be a nice balance between the salt of the soy sauce and the sweet of the sugar. Someone once told me to put in equal amounts of sugar and soy sauce -- it was a little too sweet for me.
  • Cover and simmer until done; stirring occasionally. (about 45-60 minutes).
  • Remove ginger (optional).
  • Serve with hot rice. (there will be lots of gravy).

  • Preheat oven to 350°F.
  • Saute chicken in pan with olive oil spray til golden outside.
  • Lay chicken breasts in roasting pan in a single layer.
  • Lay BLANCHED garlic over chicken breasts.
  • Whisk together tomatoes, wine, broth, tarragon and marjoram and pour over top of chicken and garlic.

This is an easy recipe I got from a cookbook. "Old Fashioned Country Cooking" found at Cracker Barrel. I was a beginner or close to it when I tried it and it is no fail. I always liked it best because it is an one-pot meal and you can forget about it for 2 hours. The chicken is always moist.

Steps:

  • Place the vinegar in the bottom of a deep ovenproof casserole dish or Dutch oven with a cover. Add chicken and surround with vegetables. Add seasonings to taste. Cover tightly and roast at 350* for 1 hour.
  • The meat will be moist and juicy without having a strong vinegar taste.
  • I learned to not go by the cooking time of this recipe. It is best to go by the estimated time on the chicken wrapper for the weight of the chicken.
  • I could never find a 3 1/2-pound chicken, only larger.

Colonel Jackson's Smothered Chicken image

Steps:

  • Heat 1 tablespoon oil in a large skillet and saute onion until tender. Remove and set aside.
  • Place flour, salt and pepper in a large, clean grocery bag. Add chicken, close bag tightly and shake to coat. Let sit 5 minutes. Remove chicken from bag, reserving leftover flour in bag. Heat remaining oil in skillet and brown chicken on all sides in hot oil. Remove chicken from skillet and place in a deep roasting pan.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat reserved flour in skillet over medium high heat, stirring constantly, to make a dark roux. Slowly stir in pepper flakes, water and vinegar. Finally stir in reserved sauteed onion. Mix well and pour mixture over chicken.
  • Cover dish and bake in preheated oven for about 35 to 45 minutes, or until chicken is tender and cooked through (no longer pink inside). Note: If gravy is too thick, add water to pan, a little at a time, until desired consistency is reached.

Baked Smothered Chicken image

Steps:

  • Season chicken with salt, pepper & garlic. Place pieces skin side down, one layer deep in a shallow baking pan lined with foil. Dribble the melted butter over the chicken, distributing well. Close foil tightly. Place in 450°F oven for 15-20 minutes or until chicken is slightly brown.
  • While baking, use this time to blend together water & flour until smooth; set aside.
  • Remove chicken from oven; tilt pan and blend into the drippings the water/flour mix. Gravy will start to thicken. Stir it around over bottom of pan and turn chicken, then salt & pepper chicken.
  • Return to oven and reduce heat to 350°F and bake 45 - 60 minutes.
  • Baste once or twice, adding a little boiling water if gravy has cooked down low before chicken is done. serve with rice or mashed potatoes.

Steps:

  • Clean chicken breasts and dry well.
  • In a shallow dish combine flour, cayenne pepper, paprika, salt and pepper.
  • Dredge chicken breasts in flour mixture to coat and shake off excess.
  • In large skillet heat 1/4 cup oil over medium heat.
  • Add chicken and brown well on both sides.
  • Remove chicken from pan and set aside.
  • Pour excess oil from pan, leaving a thin layer.
  • Add onions and garlic, saute, stirring occasionally until translucent, about 3-5 minutes.
  • In a bowl combine sour cream and chicken broth and green onions and mix well.
  • Transfer chicken back to skillet, and pour sour cream mixture over it.
  • Bring to a simmer and cook, covered, until done, about 10 minutes.
  • Serve on buttered noodles with chopped parsley.
