SMOTHERED ROUND STEAK WITH GRAVY
This is one of the first recipes I learned to cook when I was a teenager. Mom taught me to cook over the phone, after I got home from school every day. She was working and I didn't think about it at the time, but later I realized my calls were reassuring to her, since she knew I was safely home. Even when Mom told me how to do it, I nearly always tweaked it! Most of the time, it turned out okay. Mashed potatoes and biscuits are perfect with this, along with a vegetable.

Steps:
- Sprinkle each side of the round steak pieces with salt and pepper, rubbing seasoning into the meat.
- Combine 1/2 cup flour and garlic powder in a 1-gallon resealable bag. Add steak pieces, seal bag, and shake to evenly coat all the pieces.
- Heat 1/3 cup of oil in a large skillet over medium heat until hot. Add seasoned and floured steak pieces to the skillet in a single layer in batches and cook until browned, 4 to 5 minutes per side. Remove from the skillet and keep warm. Repeat with remaining pieces, adding more oil, if necessary, until all are browned.
- Add onion slices to the same skillet and stir, coating onions with pan drippings, until onion slices have separated and are just beginning to soften, about 2 minutes. Move onions to one side of the skillet and return browned steak pieces to the skillet. Spread steak evenly in the skillet and place onions on top.
- Stir together water, beef base, and Worcestershire sauce in a microwave-safe container. Microwave on high for 1 minute, stir, and pour into the skillet. Cover, reduce heat to a simmer, and cook until the steak is tender, about 45 minutes.
- Remove the steak from the skillet and add reserved 1/2 cup of flour to the pan drippings. Increase heat to medium; stir briskly and cook until bubbly, 2 to 3 minutes.
- Stir in milk and keep stirring until gravy bubbles again. Return steak, onions, and any accumulated juices to the skillet, cover, and reduce heat to a simmer. Simmer, stirring occasionally, until flavors are well combined, about 10 minutes.

ONION AND PEPPER SMOTHERED ROUND STEAK

- Combine the meat with the Essence and flour in a mixing bowl and toss to combine.
- Heat the oil in a large cast iron Dutch oven or high-sided skillet over medium-high heat and brown the meat, in batches, until browned on all sides, 4 to 5 minutes. Add 2 cups of the chicken broth and stir, scraping the bottom and sides of the pan to loosen any browned particles. Add the onions, bell peppers, salt, cayenne, and black pepper. Cook, stirring frequently, for 6 to 8 minutes, or until the vegetables are wilted. Reduce the heat to medium. Cover and cook, stirring occasionally, for 15 minutes. Add the remaining cup of broth and continue to cook, uncovered, for about 1 hour longer, or until the meat is very tender and the gravy is thickened and flavorful. Add the parsley and serve immediately over white rice, if using.

EMILY'S MARINATED VENISON STEAKS
I threw this together one afternoon, as we needed to use up the venison we had in our freezer. We don't like the 'gamey' taste of some meats, and this marinade did the trick! I find it best to have the meat marinate overnight so it really takes in the flavors.

- Whisk Worcestershire sauce, soy sauce, lime juice, onion, red pepper flakes, dry mustard, salt, thyme, black pepper, garlic, and hot pepper sauce together in a bowl; pour into a resealable plastic bag. Add venison steaks, coat with the marinade, squeeze to remove excess air, and seal the bag. Marinate in the refrigerator at least 1 hour.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove venison from the marinade and shake off excess. Discard remaining marinade.
- Cook the steaks until they are firm, hot in the center, and just turning from pink to grey, about 5 minutes per side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).

- 1. Set steaks out on counter add salt and pepper and drizzle with olive oil. Let come to room temp.
- 2. Meanwhile cook bacon until crisp. Remove with a slotted spoon to paper towel. Saute the onion and garlic in bacon grease. Deglaze with dry sherry and let almost all evaporate. Stir in cream of mushroom soup, bouillon, and heavy cream. cook through.
- 3. Grill steaks to desired doneness and top with cream of mushroom soup mixture.

- 1. fry bacon then crumble and set a side. In bacon grease saute onions and garlic and remove to the bacon. Mix together the flour salt and pepper together and coat the steaks and brown in the bacon grease.
- 2. put the browned steaks in a casserole dish and set aside. Put the bacon, onion and garlic back in the pan and add the cream of mushroom soup and milk making sure to get the brumbs from the bottom. then pour it all over the steaks in the casserole dish and cover. put in the oven at 325 degrees for 1 1/2 - 2 hours. the mushroom soup will darken to a rich brown.
- 3. Serve The steaks and gravy with mash potatoes and a veggie
SMOTHERED VENISON STEAK (CAN USE BEEF)
There are a couple of ways to make smothered steak this one is super easy. Requires a minimum of 2 ingredients but you can dress it up. It can be used on venison and beef, this just happens to be venison.

- 1. Preheat the olive oil in a skillet over medium heat. Saute the meat quickly and layer in crock pot.
- 2. Saute onion just till it is slightly brown and place in crockpot (optional)
- 3. Saute mushrooms just till they get a bit of color on them and place them in the crockpot. Sprinkle garlic over this and sprinkle with pepper as desired.
- 4. Pour soup into bowl and add 1-2 cups water for desired gravy thickness, remember you do not lose much water in a crock pot so it is better to have it a bit thick than too thin. Then pour this over the top of all. Cook on low for 6-8 hours till tender. The gravy is fantastic over mashed taters!!

- 1. Combine 1/3 cup flour, pepper, salt, and paprika in a shallow pan.
- 2. Dredge steaks in the mixture.
- 3. Melt butter over low heat in a non-stick skillet.
- 4. Add steaks and cook until browned and to desired doneness, turning steaks over once.
- 5. Remove from skillet and keep warm.
- 6. Combine the remaining 3 tablespoons of flour and the milk in a small bowl.
- 7. Whisk this mixture into the skillet drippings.
- 8. Cook over low/medium heat for 3 minutes or until gravy bubbles.
- 9. Stir constantly!
- 10. Cook for 1 additional minute, continuing to stir.
- 11. Season to taste with salt and pepper.
- 12. Serve gravy over steaks.
