SNOWBALL

I've been making these popular treats for 40 years, much to my family's delight. They look impressive with chocolate and coconut wrapped around a chewy marshmallow center, yet they're surprisingly simple to assemble.

Steps:

  • Line a baking sheet with waxed paper; set aside. , In a large saucepan, combine the butter, milk, cocoa and vanilla. Cook and stir over medium heat until butter is melted and mixture is smooth. Remove from the heat; stir in cracker crumbs and 1-1/2 cups coconut. Let stand until cool enough to handle., Using moistened hands, wrap about 1 tablespoon of mixture around each marshmallow (dip hands in water often to prevent sticking). Roll in remaining coconut; place on prepared baking sheet. Cover and freeze until firm. Store in an airtight container in the refrigerator or freezer. May be frozen for up to 2 months.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

I make these every Christmas to include with the cookies I give as gifts. It's similar to a lot of other recipes, but this one calls for almond extract, which I think is crucial to give them amazing flavor.

Steps:

  • Cream butter with sugar.
  • Add flavoring.
  • Gradually add flour, mixing in thoroughly.
  • Stir in nuts, chill.
  • Form teaspoonfuls of dough into balls.
  • Bake on ungreased sheet 20 minutes at 350 until PALE golden color.
  • Roll while still warm in powdered sugar.
  • Can also roll again in powdered sugar after they're cool.

This is a family recipe that's been made at Christmas time by at least 4 generations. This year will be the first for number 5!!! 'Bubba' brought it with her when she came from Lithuania. I pass it on in the true spirit of this season!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.
  • Bake for 12 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. I also like to roll mine in the sugar a second time.

Bake cookies just until bottoms are light golden brown, 12-13 minutes. Cool for 5-10 minutes on sheet.
  • Carefully toss warm cookies in the cinnamon sugar mix, coating completely. Place cookies on wire rack to finish cooling. Once fully cooled, re-coat each cookie in cinnamon sugar mix and serve. Repeat with other half of dough.
