Steps:
- Preheat grill over medium-high heat.
- Peel back husk on corn and remove all the silk. Lay each ear of corn on an individual piece of foil. In a medium sized bowl, mix butter, cilantro and seasoning until well combined. Rub each ear of corn with butter mixture and pull leaves over to cover. Wrap corn with foil and grill for 20 minutes.
- If grilling, grill until slightly soft, about 10 to 15 minutes.
- Squeeze the lime over the corn, if desired.
- Suggestion if grilling: soak corn, grill whole. Dip or brush with herb butter.

- For Pan Fried Fish: 4 servings.
- Coat 1 lb fresh or frozen fish fillets, thawed, in combined dry ingredients.
- Dip in milk; coat again in dry ingredients. Heat 2-3 tbsp oil in large skillet over medium heat.
- Fry 2-3 minute per side or till fish flakes easily with fork.
- Oven Fried Chicken: 6 servings.
- Heat oven to 375 degrees. Dip 2 1/2 to 3 lb. cut-up broiler fryer chicken in milk.
- Coat in combined dry ingredients; place chicken, skin-side up, on a 15 x 10" jelly roll pan; lightly brush with 3 tablespoons melted butter.
- Bake 50-55 minute or till juices run clear when chicken is pierced with fork.

- Heat grill to medium. Remove outer layers of husks from 8 ears corn. Grill corn, turning often, until kernels burst easily when pressed, 15 to 20 minutes (husks will be quite charred).
- Meanwhile, make Seasoned Butter: In a small bowl, mix together 1/2 cup melted butter and 1/2 teaspoon salt. Add 1/2 teaspoon black pepper, or a combination of 1/2 teaspoon paprika and 1/4 teaspoon cayenne pepper.
- Peel back husks and silks from corn, brush with seasoned butter, and serve.

- Heat a 14-inch skillet over medium-high heat. Add olive oil and swirl to coat the bottom of the skillet. Spread frozen corn evenly across the skillet; do not stir. Cook corn for approximately 8 minutes.
- Meanwhile, combine mayonnaise, sour cream, lime juice, cumin, paprika, chili powder, salt, and coriander in a large bowl. Set aside.
- Check the corn; it should be slightly charred. If not, allow to continue cooking for 4 more minutes (stirring is fine at this point.)
- Once corn is sufficiently browned/charred, transfer to the bowl with dressing and toss to coat. Add cotija cheese, red onion, and cilantro and mix until well combined. Serve immediately.
