CHERRY CORDIALS
This Christmas, skip the boxed chocolate-covered cherries sitting on store shelves. The taste of these homemade confections just can't be beat. Plus, they're a snap to make with only three basic ingredients-you simply soak the cherries in brandy, melt the chocolates and dip!-Dorothy Bayard, Hubertus, Wisconsin

SOUR CHERRY VODKA
This Scandinavian delight is crisp and refreshing, fruity but just tart and pungent enough to set it apart from most other cordials. It also makes a superb sauce for duck or goose: Mix 1/2 cup Sour Cherry Vodka with 1 cup of pitted cherries and thicken with arrowroot. MORELLO (SOUR) CHERRY LIQUEUR
I suppose you could make this with other types of cherries -- but it won't have the same flavour. Morello's are not meant for eating out of hand -- they DO make the most superb liqueur. This is the homemade liqueur you'll find in every Greek family's cupboard. This takes 1 1/2 months to macerate properly.

Steps:
- Bring cherries, sugar, wine, lemon juice, and salt to a gentle simmer over medium-low heat, stirring to dissolve sugar. Cook for 4 minutes. Using a slotted spoon, transfer cherries to a bowl. Raise heat to medium-high, and cook until mixture is syrupy, about 5 minutes. Let cool completely. Return cherries to syrup. (Cherries in syrup can be refrigerated in an airtight container for up to 1 month.)
- Fill 8 glasses with ice. Pour 2 tablespoons gin and 2 tablespoons syrup into each glass, and add 5 cherries. Divide seltzer among glasses (1/4 cup plus 2 tablespoons each). Garnish with fresh cherries and lemon zest strips, if desired. Serve immediately.

- Destem sour cherries. Get rid of damaged ones or the ones with worms. Wash the remaining, destemmed cherries. (Optional: make sour cherry stem tea by drying the stems on a table for a few days.)
- Layer sour cherries and sugar in the jar. Start with sour cherries, then generously cover with about 4 tbsp of sugar. Repeat until you fill the entire jar.
- Pour brandy in the filled jar slowly. Pour as much brandy as the jar can take. This process may take a few minutes. (My jar took about 1.5 cups after sugar and sour cherries. Yours may take more.) If space allows, add more sugar on top, and fasten the lid.
- Take the jar outside, and leave in direct sunlight (or a place with a lot of light) for about 40 days or 6 weeks.
