Kicking Southern Style Collard Greens image

Steps:

  • Heat oil in large pot of medium high heat. Add bacon, cook until crisp and remove from pan. Crumble and return to pan.
  • Add onion and cook with bacon until tender, about 5 minutes.
  • Add garlic and cook until fragrant.
  • Add collard greens, cook until they start to wilt.
  • Add chicken broth, salt, and pepper.
  • Bring to boil, reduce hit, and simmer for about 45 minutes (until greens are tender).

1 tablespoon olive oil
3 -4 slices bacon
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon white pepper
3 cups chicken broth
1 lb fresh collard greens, cut into 2 inch pieces

DANDELION GREENS WITH A KICK

Dandelion greens are one of my favorite bitters! They're not for everyone, but I enjoy their unique flavor. I decided to try them sauteed instead of in a salad and it was a huge hit! Makes good use of those dandelions in the yard or you can usually find dandelion greens at the grocery or Asian market.

Dandelion Greens with a Kick image

Steps:

  • Soak dandelion greens in a large bowl of cold water with 1 teaspoon salt for 10 minutes. Drain.
  • Bring a large pot of water to a boil with 1 teaspoon salt. Cook greens until tender, 3 to 4 minutes. Drain and rinse with cold water until chilled.
  • Heat olive oil and butter in a large skillet over medium heat; cook and stir onion and red pepper flakes until onion is tender, about 5 minutes. Stir in garlic until garlic is fragrant, about 30 seconds more. Increase heat to medium-high and add dandelion greens. Continue to cook and stir until liquid is evaporated, 3 to 4 minutes. Season with salt and black pepper.
  • Sprinkle greens with Parmesan cheese to serve.

Steps:

  • Tear the greens into large pieces, wash under running water to clean well, drain.
  • Preheat a heavy skillet with olive oil, add sliced onion and garlic; cook stirring frequently until onions begin to lightly brown, add minced jalapeño peppers.
  • Place the cooked onions in the bottom of the crockpot, add the drained greens,ham hock, crushed red pepper and water.
  • Cook on low for 5 to 6 hours or until greens are tender.
  • Remove meat from bones, discarding bone and fat.
  • Shred the meat and return to pot, mixing well; adjust salt and pepper to taste.
  • Top each serving of the greens with balsamic vinegar to taste.

  • Cook the bacon in a skillet over medium heat, stirring occasionally, until brown and crispy, about 10 minutes. Using a slotted spoon, remove about half the bacon to a plate. Add the collard greens to the skillet and cook, tossing occasionally, until they start to get tender, about 5 minutes.
