Steps:

  • Hot sauce, such as Aardvark or your favorite
  • Roughly chop the collards and kale into 1/2-inch pieces. Wash well under cold water. Drain and set aside.
  • In a large Dutch oven or stockpot over medium heat, add a film of olive oil followed by the turkey wings. Cook until the wings are just about crisped on all sides, about 5 minutes. Add the onions and garlic and a large pinch of salt and sweat until the vegetables are softened and aromatic, about 3 minutes. Add the greens along with the jalapenos, vinegar, sugar and 1 tablespoon salt. Cover and cook until the greens are nicely wilted, 30 minutes. Remove from the heat and check the seasoning, adding salt and vinegar as needed. Add hot sauce to taste and serve.

1 pound collard greens, stems and center-ribs removed
1 pound dinosaur kale, stems and center-ribs removed
Olive oil, to coat pan
2 pounds smoked turkey wings
2 cups diced red onions
4 cloves garlic, thinly sliced
Kosher salt
1 jalapeno, sliced into rings
3 ounces (5 1/2 tablespoons) red wine vinegar
1 teaspoon granulated sugar

PERFECT MIXED GREENS

A delicious mixture of greens. The washing process is the most important part for these tender, tasty greens. Don't forget the sugar! If you follow directions exactly, you'll have the most perfect greens ever!

Steps:

  • Pull the leaf portions of the collard, mustard, and turnip greens away from the tough stems, and discard the stems. Gently wash the greens in warm water to remove all soil and sand. Partially fill a clean sink with warm water, and stir in 3 tablespoons of salt and 2 cups of chicken broth; allow greens to soak in the mixture for 10 minutes. Scoop up the greens and allow to drain in a colander; discard used chicken broth. Do not rinse the greens.
  • Pour the remaining 2 cups of chicken broth into a large pot, and mix in the greens. Stir in vegetable oil, garlic, bacon bits, and sugar, and season with salt and black pepper. Bring to a boil, reduce heat to a simmer, and cook until the greens are tender, stirring occasionally, 45 minutes to 1 hour.

TRADITIONAL SOUTHERN GREENS (MUSTARD, TURNIP OR COLLARDS)

My family's way of "fixin'"greens. You can use any kind of green or a mix. So simple but so good. Serve with cornbread for soppin' up the pot liquor! Measurements are approximates.

Steps:

  • Fill sink with cold water.
  • Put in greens, making sure they have room to float.
  • The greens will rise to the top, while the dirt will sink.
  • Let greens sit in water for about 20 minutes.
  • Scoop out greens being careful not to stir up the dirt on bottom.
  • If they still look dirty, change water and repeat process.
  • Finish the cleaning by rinsing under running water.
  • Tear greens into pieces, throwing away thick veins and stems.
  • In a large pot, heat the bacon grease over med-high.
  • Add the greens and toss well with bacon grease for a couple of minutes.
  • Add ham stock, salt and pepper and sugar and stir.
  • Cover and simmer gently until very tender (DO NOT BOIL).
  • As the greens cook, they will produce a lot of liquid that will cook down. Add water as needed to prevent burning, but only use what is necessary so your pot liquor won't be watered down.
  • Cook time will vary but usually about 3 hours The flavor of collards is much better if you can cook for about 6 hours.

4 bunches greens
1/3 cup cold bacon grease (3 big spoonfuls)
1/2 cup ham stock or 1/2 cup chicken broth
salt and pepper
2 pinches sugar

PERFECT SOUTHERN GREENS (KALE, BEET, COLLARD GREENS, MUSTARD)

This recipe yields the best tasting greens I have ever eaten! I have yet to have a batch of bitter greens when cooked this way. This recipe has the potential to change the minds of green-haters and may even bring about a cute southern accent. Blanching the greens before adding to the slow cooker helps remove the natural bitterness. I usually make it with kale and beet greens but other greens work as well. The greens pair well with pilsner or an off-dry riesling, especially if you use the balsamic vinegar.

8 FAVORITE RECIPES FOR SOUTHERN GREENS - THE SPRUCE EATS

From thespruceeats.com
  • Southern Turnip Greens with Ham Shanks Nothing could be more Southern than ham cooked with turnip greens. For this recipe, you can use ham shanks or leftover smoked ham if you happen to have some in the fridge.
  • Swiss Chard With Bacon. As we all know, everything is better with bacon—and Swiss chard is no exception. If you are a fan of spinach, you will love Swiss chard as these greens are very similar.
  • Dandelion Greens With Garlic. We all know dandelions are weeds, but did you also know they are a tasty and nutritious green? Sauteed with onion, garlic, and hot chili peppers, the dandelion greens will bring a punch of flavor to any meal.
  • Crock Pot Black Eyed Peas and Collard Greens. Black-eyed peas and collard greens—can't think of a combination that sounds more Southern. After cooking the bacon, onion, and greens in a skillet, all of the ingredients are placed in a slow cooker and left to become a tender and flavorful dish that can be a main meal when served with a side of cornbread and tomato salad.
  • Collard Greens With Okra (2 Ways) The beauty of this recipe is it can be cooked in two different ways—ideal when you either are in a rush or have a bit of time to put dinner together.
  • Mixed Greens With Ham Hocks. Ham hocks are an essential ingredient in Southern cooking. The ham hock (also called pork knuckle) is the shank end of the pig's leg bone and requires a long cooking time to tenderize the meat.
  • Spicy Kale and Mustard Greens With Cajun Sausage. If you're looking for a way to spice up dinnertime, this greens and sausage recipe is sure to do the trick.
  • Southern-Style Turnip Greens With Salt Pork. In traditional Southern recipes, turnip greens are usually cooked with ham or pork. This recipe uses salt pork, which can be one of three cuts—pork side, pork belly, or fatback—that is cured in salt.
