This basic pasta dish can be transformed by adding extras like cooked bacon, shrimp or even a few handfuls of baby spinach to the sauce. We like canned San Marzano plum tomatoes because they are slightly sweeter and less acidic than other varieties.

Simple Spaghetti with Tomato Sauce image

Steps:

  • Cook the oil, garlic, 1/2 teaspoon salt and pepper flakes in a large skillet over medium heat, stirring, until the oil heats up and the garlic just starts to turn golden, 4 to 6 minutes.
  • Add the tomatoes; rinse the can with about 1 cup of water, and add the water to the skillet. Add the basil, raise the heat to medium-high and simmer until the sauce thickens, 15 to 20 minutes.
  • Meanwhile, add the spaghetti to the boiling water, and cook according to package directions; strain well.
  • Add the cooked spaghetti to the sauce, and stir to coat. Serve with Parmesan if desired.

Steps:

  • Slice the sausages lengthwise, leaving them attached along one side. Spread them out flat in a large skillet. Cook over medium heat for 15 minutes, turning once, until the sausages are browned and cooked through. Remove from skillet and set aside.
  • Place the ground beef, olive oil, onion, and garlic in the skillet, and cook and stir over medium heat for about 10 minutes, until the onion is translucent and the beef is browned and crumbly.   • Heat the olive oil in a large, deep skillet over medium heat. When the oil is hot, add the sausage and cook until it starts to brown, about 5 minutes.   • Cook spaghetti in boiling salted water until it's al dente. Reserve 1 cup (235 ml) of the pasta water before draining.
  • While the spaghetti is cooking, heat olive oil in a large pan (it should be large enough to toss the pasta in). Add garlic and tomatoes, and stir until well-incorporated. Season with salt and pepper.
  • Cook tomatoes down for 5 minutes until they soften and release some of their juices.

  • Add the pasta to your sauce, along with a splash of pasta water and toss to coat it for about 1-2 minutes so the pasta finishes cooking and absorbs the flavor of the sauce.
  • Add the parmesan and basil. Add another small splash of pasta water, if needed. Toss until the cheese is melted down and you're left with a smooth sauce.
  • Gradually add small amounts of pasta water, as needed, until the sauce reaches your desired smoothness.
  • Top off with extra parmesan and basil and serve immediately.

  • Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces.   • For the sauce: Using a small knife, peel the skins off the tomatoes. Chop the tomatoes by hand and drain in a colander.
  • Combine the olive oil, garlic and some salt in a bowl. Mix together and let the mixture sit for 1 hour.

This is the one-pot recipe to make when chopping an onion feels like too much work. One-Pot Pasta With Sausage and Spinach image

Steps:

  • Heat the oil in a 12-inch, deep skillet with a tight-fitting lid or a Dutch oven over medium-high until shimmering. Use your hands to pull the sausages apart into small pieces; add to the skillet and cook untouched for 1 minute.
  • Continue to cook for another 4 to 6 minutes, stirring at 1-minute intervals and breaking up the sausage into 1/2-inch chunks, until browned and crispy on the outside with no pink remaining. If you have more than 1 tablespoon of fat in the pan, drain the excess.
  • Carefully pour in the passata (it may splatter), then add the cumin, red-pepper flakes and 2 cups water, stirring to combine. Season with salt and increase the heat to bring to a boil.
  • Add the pasta, coating it with the liquid. (It won't be fully submerged, and that's OK.) Adjust the heat to maintain an active simmer with small bubbles forming on the surface. Cover and let cook, stirring every few minutes to make sure nothing is sticking at the bottom of the pan, until the pasta is al dente, about 1 minute less than the package instructions. If the pasta is still hard at this point, add a few tablespoons of warm water at a time and cook until just al dente. Depending on your pasta size and shape, you may need to add several tablespoons of water.
  • When the pasta is just al dente, reduce the heat to low and season to taste with salt. Stir in the spinach in batches, and cook, uncovered, until most of the spinach is wilted, about 1 minute more. (It will continue to wilt in the heat of the pasta after you serve it.) If the pasta seems too dry, add 1 tablespoon warm water at a time until it reaches your desired consistency.
  • Divide pasta among serving bowls and top with Parmesan.

Simple Italian Sausage Pasta Sauce image

Steps:

  • In a medum-sized sauce pan, brown sausage, bell pepper and onion. Make sure vegies are tender.
  • Drain off grease.
  • Add stewed tomatoes, green onion 1-2 Tbsp of flour (for thickening--I added this to the tomatoes in separate medium-sized bowl and mixed it vigorously with a whisk. Then I added it, along with the green onion to the pan. If you like a thin sauce, don't do this step).
  • Bring to a boil over HIGH heat, stirring constantly.
  • Reduce to low-med, simmer covered for 15 min and uncovered for 15 min, stirring occasionally.
  • Serve over pasta or rice with a nice salad on the side with garlic bread.

1/2 lb Italian sausage (not in the casing)
1 small red bell pepper, diced
1/2 small red onion, diced
1 (14 1/2 ounce) can stewed tomatoes (diced with juice)

Steps:

  • Whisk oil, lemon juice and garlic in small bowl to blend. Season dressing to taste with salt and pepper.
  • Cook sausages in heavy medium skillet over medium heat until browned and cooked through, turning frequently, about 20 minutes. Using tongs, transfer sausages to paper towels and drain; cut into 1/4-inch-thick rounds. Combine sausage rounds and greens in large bowl.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain well.
  • Add hot pasta to bowl with sausage rounds and greens; toss until greens begin to wilt. Mix in enough dressing to coat. Season to taste with salt and pepper. Divide pasta among bowls. Top with cheese and serve.

Steps:

  • Sauté the bacon in a large pot over medium-high heat for about 3 minutes, until crispy.
  • Add the sausage meat and red pepper flakes and sauté for about 10 minutes, until the meat is cooked through. Remove from the pan and set aside.
  • In the same pot, sauté the onion over medium heat for 2-3 minutes, until translucent.
  • Add the garlic and sauté for 2 minutes, until fragrant.
  • Add the mushrooms and cook for 2-3 minutes, until they start to release some of their liquid.
  • Add the wine, salt, and pepper and stir to combine. Cook for 7-8 minutes, until the wine has reduced by half and the mushrooms are tender.
  • Add the spaghetti and sausage mixture and toss to combine.
  • Add the Parmesan, pasta water, and spinach and stir. Cook until the pasta is warmed through and the Parmesan has melted.

Red Wine Italian Sausage Pasta Sauce image

Steps:

  • In a large non-stick skillet with a lid, add the olive oil and warm over medium heat, allow oil to heat for approximately 2 minutes.
  • Add chopped onion and green pepper, cook for about 2-3 minutes or until onion is soft and you can see thru it, stir for even cooking.
  • Add chopped/minced garlic, stir and continue to simmer thru for another 2 minutes.
  • Add dry seasonings, chopped tomato, and chopped Italian sausage. Stir all and cook for another 2 minutes then add the ¼-cup dry red wine and stir all together.
  • Add fennel seed & black pepper, cook another 2 minutes longer.
  • Next, add the tomato sauce and water, bay leaves, salt and sugar, stir all and cover with lid, allow to cook on medium until mixture begins to slow boil, then remove lid. Stir again, cover and turn heat to a low simmer, allowing to cook for several hours or until ready to serve with pasta.
  • Allowing sauce to slow cook for at least 2-3 hours makes for a more robust sauce ~ serve with al dente pasta, a good crusty Italian bread (ciabatta for example), freshly grated Italian cheese (a good quality aged Pecorino Romano made from sheeps or goats milk is best, never cows milk), & your favorite red wine (our favorite is a good cabernet).
  • Sauce is also better the next day, so as a time saver make this sauce up a day ahead, allow to cool thoroughly before refrigerating, then serve the next night for dinner.
