- In a Dutch oven, combine all ingredients; bring to a boil. Reduce heat; simmer, covered, 25-35 minutes or until apples are tender, stirring occasionally. Remove from heat; mash apples to desired consistency. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight. Serve cold or heat through in a saucepan, stirring occasionally.

- Peel, core, and slice apples.
- In a large pot, bring apples, lemon juice, spices, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
- Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
- Let cool, then transfer applesauce to airtight containers.

- Preheat oven to 350 degrees F.
- Generously grease two 7x3x2-inch loaf pans.
- In a small bowl, combine topping ingredients; set aside.
- In a medium bowl, combine applesauce, sugar, vegetable oil, eggs, and milk; set aside.
- In a small bowl, sift flour, baking soda, baking powder, salt, allspice, cinnamon, and nutmeg.
- Add the dry ingredients (does not include topping) to the applesauce mixture; beat well.
- Fold in pecans.
- Pour this mixture evenly into the two prepared pans.
- Sprinkle topping evenly over the two loaf pans.
- Bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean.

THE ABSOLUTE BEST APPLESAUCE SPICE MUFFINS WITH SPICE TOPPING!
This is one of my all time favorite muffin recipes! --- you can substitute one large finely chopped apple for the nuts, increase the spices if desired --- some of the butter can be replaced with more applesauce for a lower fat muffin :)

- Set oven to 350°F.
- Set oven rack to second-lowest position.
- Butter 12 muffin tins or line with paper liners.
- For muffins: in a small bowl mix together first 7 dry ingredients.
- In another large bowl whisk together eggs and brown sugar until well combined.
- Add in melted butter whisking continuously until mixture is creamy.
- Stir in applesauce.
- Fold in flour mixture until JUST combined.
- Stir in nuts.
- Divide the batter evenly between muffin tins.
- To make the topping: stir together all ingredients then sprinkle over tops of muffin batter.
- Bake for about 20-22 minutes, or until muffins test done.

- Peel, core, and cut the apples into 1 1/2-inch pieces; place in a medium saucepan with sugar and 1/4 cup apple juice. Cook over medium-low heat, stirring, until apples are soft enough to mash, 50 to 60 minutes.
- Add the remaining cup of apple juice, and continue to cook until the apples are very soft and break down, about 30 minutes. Using wooden spoon, stir to break large pieces. If applesauce gets too dry, add more juice, 1/4 cup at a time as needed. Remove saucepan from heat, and whisk apples until smooth. Stir in cinnamon, nutmeg, and cloves. Serve at room temperature.
SPICED APPLES AND RAISINS
Steps:
- Melt the butter in a clean skillet over medium-low heat. Add the apples and thyme and coat in the butter; cook and stir for 8 minutes to give them some color. Toss in the raisins and add the apple juice, stirring to scrape up the brown bits. Stir in the brown sugar, cinnamon, cloves, cardamom, and dry mustard; season with salt and pepper. Squeeze in the lemon juice to wake up the flavor and simmer for 10 minutes or until the apples break down and soften. Serve spiced apples and raisins with holiday pork, turkey or ham.

- Preheat the oven to 350 degrees F. Adjust the racks to the center of the oven. Spray a Bundt pan with nonstick spray.
- Whisk together the flour, baking soda, cinnamon, salt, ginger, cloves and nutmeg in a large bowl. Beat together the butter and brown sugar in a separate bowl with an electric hand-held mixer until light and fluffy, about 4 minutes. Add the eggs, one at a time, until incorporated. Alternate adding the flour mixture and the applesauce, ending with the flour, being careful not to over-mix. Transfer the batter to the prepared Bundt pan and bake until a toothpick inserted into the middle of the cake comes out clean, 55 minutes. Cool completely before inverting.
