BANANA SPICE WAFFLES

Mashed banana, apple pie spice and vanilla make these waffles reminiscent of warm banana bread.

Banana Spice Waffles image

Steps:

  • Whisk together the flour, sugar, baking powder, apple pie spice and salt in a large bowl. Whisk together the buttermilk and eggs in a medium bowl until well blended and then whisk in the melted butter, vanilla and mashed banana. Pour the buttermilk mixture into the flour mixture and stir until just combined with a few lumps. Set aside for 10 minutes.
  • Preheat the oven to 200 degrees F. Preheat a waffle iron to medium-high. Lightly brush the top and bottom of the waffle iron with butter.
  • Fill each waffle indent about three-quarters full. Close the lid gently and cook until the waffle is golden brown and crisp, 5 to 7 minutes. Repeat with additional butter and the remaining batter, keeping the cooked waffles warm in the oven until ready to serve.
  • Serve the waffles topped with warmed honey, sliced banana and chopped peanuts.

Pumpkin Spice Waffles image

Steps:

  • Preheat a waffle maker.
  • Whisk together the milk, pumpkin puree, oil, maple syrup and egg yolks. In a separate bowl, whisk together the flours, baking powder, pumpkin pie spice, baking soda and salt.
  • Slowly mix the flour mixture into the pumpkin mixture and stir until smooth, taking care not to overmix.
  • In a separate large bowl, add the egg whites and beat with an electric mixer (or whisk vigorously by hand) until stiff peaks form, 3 to 4 minutes. Gently fold the egg whites into the batter until just combined.
  • Lightly spray your waffle iron with cooking spray or oil, then ladle the waffle mixture in. Cook per the manufacturer's instructions and repeat with the remaining batter. Serve with maple syrup and chopped pecans.

  • Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
  • In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.

  • Cook according to your waffle iron directions.
  • I do these in my belgian waffle iron and it uses about 1 cup batter and takes 4-5 minutes to bake.
  • They come out a nice deep, golden brown.

A different waffle that I like to serve company. The recipe says to cook the raisins in boiling water for 5 minutes, then drain and chop. I don't do this. I just add the raisins. The recipe also says to use cake flour. You can have these for breakfast or serve them as a dessert with ice cream or with whipped cream. I found this recipe in the High Altitude Cookbook and tried this recipe for the first time in 1989. If you know company is coming ahead of time, you can mix the dry ingredients early; then all you have to do is add the wet ingredients.
