Popcorn is roasted with butter and a blend of spices to make an addictive snack. I make this for watching movies or even sports.

Cajun-Spiced Popcorn image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the popped popcorn in a large roasting pan.
  • In a small bowl, stir together the melted butter, paprika, lemon pepper, salt, garlic powder, onion powder, and cayenne pepper. Pour over the popcorn and stir until it is somewhat evenly coated.
  • Bake for 15 minutes, stirring every 5 minutes. Remove from the oven and cool completely. Serve immediately, or store in an airtight container for later.

Steps:

  • Place the popcorn kernels in a heavy-bottomed large pot and add enough oil just to cover them. Put the lid on and cook on high until you hear the first pop. Immediately take it off the heat and let it sit 1 minute. Then return it to the heat and finish popping, shaking the pan the whole time. Toss the cheese with the white pepper.
  • In a large bowl, toss the popcorn with the butter well then with the cheese and black pepper mixture and taste for seasoning.

Sweet and Spicy Popcorn image

Steps:

  • Stir the confectioners' sugar, paprika, salt, garlic powder, cumin and cayenne together in a small bowl. Heat the coconut oil in a very large pot with a lid over medium heat. Add the popcorn and half of the sugar mixture, cover the pot and shake to coat. Add the remaining sugar mixture and continue to shake until well coated. Serve immediately.

Steps:

  • In a large Dutch oven or heavy-bottomed pot set over medium-high heat, heat oil and 3 popcorn kernels. When kernels pop, add remaining kernels, lower heat to medium-low, and cover almost all the way with a lid, leaving a tiny crack open for steam to escape (face the crack away from where you are standing).
  • Cook, shaking occasionally, until popping stops.
  • Transfer popcorn to a bowl, and immediately toss with salt, cumin, sweet paprika and pimentón, if using. For the utmost crunch, let popcorn settle for 5 to 7 minutes before eating.

1/2 cup grapeseed or other neutral oil with a high smoke point (such as corn, canola, or sunflower)
1/3 cup popcorn kernels

Steps:

  • Mix 1/2 teaspoon piment d'Espelette and 1/2 teaspoon salt in small bowl and reserve.
  • Melt butter in small saucepan over medium heat. Remove from heat; stir in remaining 1/2 teaspoon piment d'Espelette and 1/2 teaspoon salt.
  • Combine popcorn kernels and peanut oil in large deep pot with lid. Heat over medium-high heat, occasionally swirling pot so that popcorn kernels are coated with oil. Cover pot. When popcorn kernels start popping, rotate pot over burner until all kernels have popped. Remove popcorn from heat. Immediately add melted butter mixture and Marcona almonds to pot. Cover pot. Using oven mitts, firmly hold pot and lid together and shake until popcorn and Marcona almonds are well coated with melted butter mixture. Transfer popcorn mixture to serving bowl. Sprinkle with reserved piment d'Espelette-salt mixture and serve.
  • Tender Spanish almonds that are usually sold roasted and salted; available at some supermarkets and at specialty foods stores and natural foods stores and online from latienda.com.

Spicy-Sweet Buffalo Popcorn image

Steps:

  • Spray a large bowl with cooking spray. Fill with popcorn.
  • Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper or a silicone pad.
  • Combine sugar and water in a saucepan and bring to a boil over medium-high heat. Cook, without stirring and swirling pan gently as needed, until sugar has melted and the caramel is a deep amber color, 8 to 12 minutes. Remove from heat.
  • Stir Buffalo sauce and butter carefully into the caramel; it will spit and bubble and may form a ball. Return to heat; bring to a boil, stirring until caramel is dissolved, about 3 minutes. Remove from heat and stir in the baking soda and cayenne pepper.
  • Pour spicy caramel mixture carefully over the popcorn. Toss to completely coat, guarding your hands from the hot caramel. Spread the coated popcorn onto the prepared baking sheet.
  • Bake in the preheated oven until dry, 15 to 20 minutes. Let cool for 10 minutes; stir.
