SPICY MINI PORK KABOBS
This is out of my "C'mon Over!" Pillsbury cookbook...enjoy! You can Assemble the kabobs in advance; cover and refrigerate them for up to three hours.

Steps:
- In medium nonmetal bowl or 1-gallon resealable food-storage plastic bag, mix all ingredients except pork and skewers. Add pork; turn to coat. Cover dish or seal bag: refrigerate at least 4 hours to marinate. Soak wooden skewers in water 30 minutes.
- Heat gas or charcoal grill. Thread pork evenly onto skewers: discard marinade.
- Place kabobs on grill over medium-high heat. Cook 12 to 15 minutes, turning once, until pork is no longer pink in center.

- Place pork cubes in zip lock bag; add salad dressing, honey, red pepper flakes peppers and onions. Seal bag; refrigerate for at least 1 hour to overnight to marinate.

- In a large mixing bowl (or ziploc bag), combine chopped pork, 1 Tbsp Italian seasoning, 1 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper and stir until well combined. - Freeze pork on a rimmed baking sheet until very firm around the edges, 45–60 minutes. Remove pork from freezer and slice as thinly as possible. Slice pieces lengthwise into 1"–2"-wide strips.
- Meanwhile, combine onion, chiles, garlic, Sprite, soy sauce, vinegar, sugar, peppercorns, and 1 Tbsp. salt in a large resealable plastic bag. Grind mushrooms in spice mill or with mortar and pestle to a powder; whisk into marinade. Add pork a few pieces at a time, coating well so they don’t stick together and can evenly absorb marinade. Cover and chill 6–8 hours.
- Prepare a grill for medium-high heat. Remove pork from marinade and thread onto skewers. Transfer marinade to a small saucepan and bring to a rolling boil on the grill. Cook 1 minute, skimming off any foam that rises to the surface. Move to a cooler part of the grill.
- Season pork lightly with salt and grill, undisturbed, until well browned, about 2 minutes. Turn and baste with marinade. Continue to grill, turning and basting every minute, until cooked through and browned all over, about 4 minutes longer.
