QUINOA PILAF (UPMA) (PRESSURE COOKER)
Upma is a pilaf preparation from South India. (P.S. Upma is typically mildly spiced and served with coconut chutney or ginger chutney, e.g., recipes #110219, #116586. For more spice, select a chutney which suits your tastes.) This recipe is different from most Upma recipes in using a pressure cooker and quinoa instead of semolina. You can substitute 1-1/4 cup semolina (more traditional) for the quinoa and your choice of chopped seasonal vegetables for the peas. - After three whistles, remove from heat.

- Heat pressure cooker with oil and butter, sauté onion until transparent.
- Add rice and mix well. Add chicken stock and peas, and bring to boil, close the lid, reduce the heat and cook for 6 minutes. Let pressure cooker to cool down slowly for about 6 minutes.

- Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add butter. When butter is hot, add rice. Cook and stir rice until lightly browned, 3-5 minutes. Press cancel. Add mushrooms, green onions and garlic. In a small bowl, whisk water and beef base; pour over rice mixture., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 4 minutes. Let pressure release naturally. If desired, serve with additional chopped green onions.

This recipe makes a delicious side dish. Goes good with meats and veggies. It's a tasty rice with a little bit of spice! I LOVE garlic, so if you don't like it as much as I do, then just add 2 cloves instead of 6.

- Clean, wash and soak the rice for 10 minutes.
- Drain and keep aside.
- Heat the oil in a pressure cooker and add the bay leaf, clove, cinnamon and cumin seeds.
- When the seeds crackle, add the onion and ginger-green chilli paste and sauté till the onion turns translucent.
- Add the rice and sprouts and sauté for 2 minutes.
- Add the turmeric powder, chilli powder, ground coriander seeds and salt with 2 1/2 cups of hot water.
- Pressure cook for 2 whistles (15 minutes).
- Serve hot, garnished with the coriander.

- Combine habanero pepper, black pepper, MSG, paprika, and cumin in a bowl. Rub mixture evenly over ribs; refrigerate for at least 30 minutes.
- Combine cola, apple cider, jam, Worcestershire sauce, and brown sugar together in another bowl; stir well.
- Heat oil in a pressure cooker over medium-high heat. Add ribs in batches; cook until browned all all sides, about 8 minutes. Remove from pot and set aside. Add onions and garlic to the pot. Cook and stir until onions are translucent, about 5 minutes. Return ribs to the pot; pour in cola mixture.
- Close pot securely and place pressure regulator over vent according to manufacturer's instructions. Bring to high pressure, with rapid steam escaping the cooker, about 5 minutes. Reduce heat to medium and cook for 30 minutes. Let pressure release naturally according to manufacturer's instructions, about 15 minutes.
- Combine water and cornstarch together in a small bowl; mix until cornstarch is dissolved.
- Open pot carefully; transfer ribs to a plate. Skim any extra fat off the top of the liquid; drain to remove any solid bits. Return liquid to the pot. Mix in the cornstarch slurry. Cook, stirring constantly, over medium-high heat, until boiling. Remove from heat. Add ribs back in and coat in the liquid.
