ASIAN STEAK AND NOODLE BOWL
A delicious combination of Asian flavors infused in lean meat, vegetables, and Japanese noodles. So comforting, you won't even know this was low-fat!

- Whisk soy sauce, vegetable oil, brown sugar, ginger, and garlic powder together in a large bowl. Pierce flank steak several times with a large fork. Place in the bowl and cover with plastic wrap. Let marinate in the refrigerator, at least 4 hours and up to overnight.
- Bring a large pot of salted water to a boil. Cook udon noodles in boiling water, stirring occasionally, until tender yet firm to the bite, 13 to 14 minutes. Drain.
- Heat a large skillet over high heat. Remove steak from marinade and cook until well-browned, about 2 minutes per side. Reserve marinade.
- Preheat grill for medium heat and lightly oil the grate. Grill steak, basting with half of the reserved marinade, until internal temperature reaches 140 degrees F (60 degrees C) for medium or 150 degrees F (65 degrees C) for medium-well, at least 10 minutes per side. Slice steak thinly against the grain.
- Combine remaining marinade, snow peas, broccoli florets, and mirin in the skillet. Cook and stir over medium-high heat until snow peas are tender, about 2 minutes. Add drained noodles; mix well to combine.
- Divide noodle mixture among large bowls. Top with steak slices.

SOY & SESAME STEAK NOODLE STIR FRY
You can use striploin steak here if you like, it's important the steak is cut into thing strips to cook it evenly and quickly. To do the carrot ribbons, I like to use a peeler to give nice long thin ribbons.

Steps:
- Make sure you have a large pot of salted water at boiling point over a high heat. Have a frying pan over a high heat also.
- Add the noodles to the saucepan of boiling water for 3 to 4 minutes, then drain.
- While the noodles are cooking add 2 tablespoons of the oil to the frying pan, season the beef and sprinkle with half the sesame seeds. Add to the pan and fry for 30 seconds on each side just enough for it to turn brown and nicely char. Set aside on a plate.
- Add the remaining tablespoon of oil to the pan along with the vegetables and toss over high heat to soften them slightly. Add a splash of water along with the rice wine vinegar, soy sauce and oyster sauce let them steam for a minute then return the beef to the pan and toss along with the drained noodles. Serve with the cilantro leaves and mint over the top and remaining sesame seeds.
SPICY NOODLES WITH SESAME DRESSING

- Bring six quarts water to boil. Add the peanut oil and cook the noodles for three to four minutes, or until al dente. Drain and refresh under running cold water.
- Place the noodles in a large serving bowl and add one tablespoon sesame oil. Toss to prevent them from sticking together and set them aside.
- Mix together the remaining ingredients until you have a smooth sauce. If necessary, thin with a little olive oil. Correct seasoning and pour the dressing over the noodles. Toss thoroughly and serve at room temperature.

- Cook the linguine or spaghetti according to the package directions; drain well. Toss the linguine with sesame oil, and set it aside. Keep it warm.
- Combine the peanut butter (or tahini), soy sauce, white wine vinegar, gingerroot, and chili oil. Add the peanut butter mixture to the linguine mixture and toss gently to combine. Add the green onions and toss gently to combine. Garnish with toasted sesame seeds, if desired. Serve immediately.

SOBA & BEEF SALAD WITH SESAME-SOY DRESSING

- Whisk mirin and ginger in a small bowl.
- Place steak in a shallow baking dish or pie pan. Pour mirin mixture over the steak; turn to coat. Cover and marinate in the refrigerator for at least 30 min or up to 2 hrs, turning occasionally.
- Put a large pot of salted water on to boil for noodles.
- Make Sesame-Soy Dressing by whisking soy sauce, tea, vinegar, canola oil, and sesame oil in a small bowl. Set aside.
- Cook noodles in the boiling water until just tender, about 6 minute. Drain; rinse under cold water. Transfer noodles to a large bowl.
- Add carrot and 1/3 cup of Sesame-Soy Dressing. Toss to coat.
- Prepare a grill. Lightly oil the grill rack by use tongs to rub it with an oil-soaked paper towel. Grill steak for 4 to 6 min per side for medium-rare, or until it reaches desired doneness. (Alternatively, brush a little canola oil over a skillet or ridged grill pan, preferably cast-iron, and heat over high heat. Add steak and cook for 4 to 6 min per side.).
- Transfer the steak to a cutting board. Let rest for 5 minutes. Slice thinly across the grain.
- Build the salad on 4 plates with about 1 cup of mixed greens, 1/4 of noodle mixture, then 1/4 of steak slices.
- Whisk the remaining dressing. Drizzle about 4 tsp over each salad. (Don't drown salad. It has a lot of flavor.).
- Sprinkle with sesame seeds. Serve immediately.
