EASY RIB EYE ROAST
I make this every time rib eyes are on sale. Easy and delicious; there are never any leftovers! We usually cook ours medium-rare!

Steps:
- Preheat an oven to 500 degrees F (260 degrees C).
- Beat butter and garlic together in a bowl. Poke several holes in roast with a sharp knife. Rub butter mixture all over roast and season meat with salt and black pepper. Place roast, fat-side up, in a roasting pan.
- Roast in the preheated oven for 20 minutes, reduce heat to 325 degrees F (165 degrees C), and continue cooking until roast is reddish-pink and juicy in the center, 1 1/2 to 2 hours. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Steps:
- Trim excess fat from roast. Combine pepper and cardamom; pat onto roast.
- Place roast in a large, shallow dish.
- Combine soy sauce and next 4 ingredients, pour over roast. Cover and marinate 8 hours in fridge, turning occasionally.
- Remove roast from marinade, discard marinade. Wrap roast in foil, and place in a shallow pan. Insert meat htermometer, making an opening so thermometer does not touch foil. Bake 325F for 2 hours or until thermometer reads 140F (rare) or 160F (medium).

SPICY RIB RUB FOR PORK ROAST
The flavors come alive in this rub. Even though we've tried numerous ways to fix pork roast, we always come back to this recipe because of the magnificent flavors and ease in preparation. Your kitchen will smell heavenly while this is cooking. This recipe gives you enough rub for 3 pork roasts so store excess in an small container or spice jar.

- Combine all ingredients.
- Rub on a 2 ½ to 3 pound pork roast.
- Place roast in a Dutch oven, uncovered, 350 degrees for approximately 1 ½ hours or until internal temperature reaches 145 degrees.

SUPER SPICY RIBS

- A few hours before beginning the slow cooking of the ribs, make the rub by combining garlic powder, onion powder, chili powder, paprika, mustard, and salt in a bowl and mixing well. Rub the mix into the meat and let sit for at least an hour. The mixture will begin to cure the meat.
- About 30 minutes before beginning to barbecue, heat the grill.
- Wrap ribs in heavy duty aluminum foil and place on the grill over indirect heat and slowly cook for about 2 hours, turning occasionally.
- While the ribs are cooking, begin the sauce on the stovetop. Combine apple juice, tomato juice, molasses, Worcestershire sauce, hot sauce and barbecue sauce in a saucepan, stirring to mix well. Simmer over low heat until it beings to thicken. Let simmer for 1/2 hour. Reserve about 1 cup to serve on the side with the ribs, and use the rest to brush on the ribs as they barbecue.
- When the meat begins to become fork tender, unwrap ribs and begin brushing on the sauce. Continue to apply the sauce to the ribs during the barbeque process. When ribs are able to pull apart, they are ready.
GRILLED RIBEYE (RIB) PORK CHOPS WITH EASY SPICY BBQ SAUCE
Steps:
- Preheat grill over medium-high heat and brush with olive oil. Season chops with salt and pepper on both sides. Place pork on grill for 8-9 min., turning once halfway through, until internal temperature is 145°F as measured by a meat thermometer. Remove pork from grill, tent with foil and rest for 3 min.
- Spicy BBQ Sauce: Heat oil in pot over medium heat. Sauté onion until soft; add ketchup, brown sugar, Worcestershire sauce, vinegar and cayenne. Simmer for 15 min. until sauce thickens; turn off heat. Once cooled, puree sauce in blender. Serve chops with spoonful of sauce.
SPICED ROAST BEEF AND VEGETABLES
Steps:
- Preheat oven to 350°F. Place first 3 ingredients in heavy small plastic bag. Using meat mallet or rolling pin, crush spices. Transfer crushed spices to small bowl; mix in salt, ginger and cayenne.
- Toss potatoes, carrots and 3 tablespoons oil in large bowl. Sprinkle with salt and pepper. Spread vegetables in large roasting pan. Roast 30 minutes.
- Meanwhile, using tip of knife, make several slits in roast; insert garlic into slits. Brush roast with remaining 1 tablespoon oil. Rub spice mixture over roast.
- Push vegetables to sides of pan, leaving space in center. Place roast in center of pan. Roast until meat thermometer inserted into center of meat registers 125°F for medium-rare, about 1 hour. Transfer roast to platter. Tent with foil. Increase oven temperature to 450°F. Spread vegetables in pan; continue roasting until vegetables are tender and brown, about 10 minutes. Sprinkle with cilantro.
- Surround roast with vegetables. Cut roast into thin slices and serve.
RIB EYE ROAST
Steps:
- 1. Preheat the oven to 350°F. Sprinkle the roast generously with salt and pepper, then place on a rack in a shallow roasting pan.
- 2. Roast the meat for 2 hours and 20 minutes (or about 14 minutes per pound at 130°F on a meat thermometer) for rare meat. For medium-rare meat, roast until a meat thermometer reads 140°F-145°F. Remove from the oven and let rest for 15 minutes before carving enough meat for one dinner.

SPICE-CRUSTED RIB-EYE ROAST WITH GARLIC JUS - FOOD

- Preheat the oven to 350°. Spread the butter over the cut side of the garlic and wrap it loosely in foil, crimping the package to seal. Roast for about 45 minutes, or until very soft. Squeeze the soft garlic cloves from the skin and strain into a small bowl. Cover with plastic wrap.
- Increase the oven temperature to 400°. Put the reserved rib bones in a roasting pan and roast for 30 minutes, or until browned. (Leave the oven on.) Transfer the rib bones to a medium saucepan, cover with 4 cups of water and add 1/2 teaspoon of salt. Cover partially and simmer over low heat until the liquid is reduced to 1 cup, about 1 1/2 hours. Reduce the temperature to 325° and roast for about 2 hours longer, or until an instant-read thermometer inserted in the center of the roast registers 120° for medium rare. Transfer the roast to a carving board. Cover loosely with foil and let rest for 10 to 15 minutes before slicing.
- Pour the juices from the roasting pan into a glass measure and discard the fat. Set the roasting pan over two burners on moderately high heat. When the pan starts to sizzle, add 1/2 cup of water and simmer, scraping the bottom of the pan to loosen any browned bits. Stir in the reserved stock and simmer over low heat for a few minutes. Pour this jus into a small saucepan and add the reserved pan juices from the glass measure; keep the jus warm over very low heat.
