- In a heavy bottomed pot, add enough oil to reach 4 inches up the sides. Preheat to 365 degrees F.
- In a medium-sized bowl, combine the flour, paprika, onion powder, salt, and baking powder. In a small bowl, whisk together the buttermilk and egg. Add the wet mixture to the dry mixture, whisking the batter until just combined. In a medium bowl or wide baking dish, add onion rings and dust with flour. Toss gently to uniformly coat rings, and shake off excess flour. Working in batches, dip floured onion rings into the batter, making sure they are thoroughly coated, then carefully add to the preheated oil. Cook until deep golden, flipping halfway through if necessary, about 2 minutes. Remove the onion rings to a paper towel-lined plate and season immediately with salt. Transfer to a serving platter and serve hot. No ketchup needed!

- Place the onions, egg substitute, and flour into separate shallow bowls. In another shallow bowl, stir together the bread crumbs, salt, pepper, cayenne, oregano, basil, and red pepper flakes.
- Heat oil in a heavy skillet or deep-fryer to 365 degrees F (180 degrees C). Dip rings of onion into flour, then into the egg substitute, and then into the bread crumb mixture, shaking off any excess after each dip. Carefully drop each onion ring into the hot oil, and fry for about 30 seconds on each side, or until golden. Remove from hot oil to paper towels to drain. Serve hot with lots of ketchup.

- Whisk together flour, cornstarch, dry potato flakes, and cayenne pepper in a large bowl. Whisk in club soda to make a smooth batter.
- Place panko bread crumbs in a shallow bowl.
- Heat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C).
- Place a few onion rings at a time into the bowl of batter and turn to coat all sides with batter.
- Remove onion rings from batter and place into pan of panko bread crumbs; turn to coat completely with crumbs.
- Cook a few rings at a time in the hot oil until golden brown, about 2 to 3 minutes.
- Transfer to a cooling rack set over paper towels to drain. Season with salt to taste and serve.

SPICY SWEET ONION RINGS
These are truly something different...an onion ring recipe calling for condensed milk & chipotle peppers! The original version in Southern Living magazine used 1/4 cup of jalapeños, but I like the slightly smoky flavor the chipotles add. Our family likes these served with ranch dressing.

- Peel the onion& slice into 1/4 inch slices: Separate into rings.
- Combine flour& cornmeal, mix well.
- Combine beaten egg, sweetened condensed milk,& club soda: stir into flour/cornmeal mixture.
- Finely mince 1 or 2 chipotle peppers (depending on size& desired heat level) and stir into batter mixture.
- Dip onion rings into batter coating well, shake lightly, and fry in deep hot oil (350-375°F): avoid overcrowding.
- Fry until golden brown& drain the rings on paper towels.

SPICY ONION RINGS
My mom used to make these when I was growing up. We rarely fry things in our house these days, but these are so yummy that we have to make them on occasion! These have just a slight spicy flavor...enough to make these onion rings unique!

Steps:
- Heat approximately one inch vegetable oil over medium high heat.
- Test the oil by putting a small cube of bread into the oil.
- If it turns brown after half a minute, the oil is ready.
- Cut the ends off the onion and peel the outer layers.
- Cut the onion into 3/4 inch slices and separate into rings.
- Mix together the pancake mix and beer.
- Add the paprika, chili powder and cayenne pepper to the mix.
- Take 5-6 of your "rings" and coat the rings of onion in the batter then fry for approx 5 minutes until both sides are golden brown.
- Turn over once during the frying process so both sides are cooked.
- Remove from oil and place on paper towels to drain.
- Season the onion rights with salt while they are still hot.
- Repeat until the rings are all fried.
SPICY SWEET STICKY WINGS WITH CRISPY RINGS
Steps:
- For Chicken Wings:
- Preheat oven to 375 degrees F.
- Place the wings onto a nonstick baking sheet and season with salt and pepper. Cover with foil and bake 30 minutes.
- In a large measuring cup whisk together orange marmalade, poultry seasoning and chili sauce and set aside.
- Remove chicken from oven and turn oven to broil. Remove foil and pour sauce over top of wings making sure they are thoroughly coated. Place back in oven and broil for 5 minutes. Keep an eye on them to make sure the sauce does not burn.
- For Onion Rings:
- Combine sliced onions and buttermilk in a large bowl. Toss to coat and let soak for 5 minutes.
- Pour oil into large skillet over medium heat and heat to 375 degrees F.
- Mix flour, cornmeal and paprika in a baking dish. Drain onion rings. Working in batches, add a few onion rings to flour mixture at time and turn to coat. Add to the hot oil and fry until golden brown, about 2 minutes. Drain on a brown paper bag or paper towels. Sprinkle with salt and pepper and serve.
- If not serving immediately the rings can be held in a 250 degrees F oven for up to 15 minutes.
CLASSIC ONION RINGS

- Heat the oil in a deep fryer to 375 degrees F.
- In a small bowl, mix together the flour, cayenne pepper, some salt and pepper, the egg and soda water. Before dipping the onion rings, add some ice cubes to keep the mixture very cold.
- Dip the separated onion slices into the batter until they are all coated and set aside. Repeat with the remaining rings.
- Deep fry the rings, a few at a time, until golden brown, 2 to 3 minutes. Remove to paper towels to drain. Season with salt and pepper and serve.

- Slice off ends of onions and peel off the skins. Slice into 1/2-inch rings. Place rings in a bowl of ice water and let sit. In separate bowl whisk together beer and flour. Season with salt, cayenne, and a dash of Tabasco. Whisk together. Dry onion rings on paper towels then dip into batter. Heat oil in a large kettle to 375 degrees. Dip dried onion rings in batter. Fry onion rings until brown and crispy. Serve.
CRISPY ONION RINGS

- Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
- Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
- Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
- In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
- Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.

- In a very large pot (or deep fryer), heat the oil to 365°.
- In a bowl, whisk the flour with the cornstarch, baking soda and 2 teaspoons of salt.
- Add 2 1/2 cups of the club soda and whisk until smooth; the batter should be thick but pourable. If needed, add the remaining 1/2 cup of club soda, a few tablespoons at a time.
- Working with 6 or 7 onion rings at a time, dip them in the batter until completely coated; as you pull the rings from the batter, scrape some of the excess against the side of the bowl.
- Carefully add the onion rings to the hot oil and fry until golden and crisp, about 2 minutes.
- Drain the onion rings on paper towels.
- Sprinkle the onion rings with salt and serve immediately or keep warm in an oven on low heat while you coat and fry the rest. Enjoy!

I am not a fan of fried foods. After trying a few different oven baked recipes, I came up with this one. Feel free to cut out the jalapeno or lessen the cayenne if you don't like spicy rings.

- Spray a cookie sheet with non stick spray.
- Combine bread crumbs, jalapeno, cayenne, curry, and garlic in a shallow baking dish.
- Beat eggs in a bowl.
- Put flour into a bowl.
- Dredge onions (a few at a time) in flour.
- Coat them in egg (one at a time).
- Cover completely with bread crumb mixture.
- Place in a single layer on cookie sheet.
