Steps:

  • Line a baking sheet with parchment or a silicon baking mat.
  • Cut the apples lengthwise (stem to bottom) into 4 thick slices each. Remove any visible seeds and keep the core intact. The end slices will be rounded; cut a thin slice off so they lay flat. Poke a small hole in the bottom of each slice with a wooden ice-pop stick and push halfway into the apple.
  • Combine the bittersweet chocolate and 1 teaspoon of the coconut oil in a medium microwave-safe bowl and microwave at 50 percent power for 30-second increments, stirring in between, until melted and smooth. Add the white chocolate and remaining 1 teaspoon coconut oil to another medium microwave-safe bowl and microwave at 50 percent power for 30-second increments, stirring in between, until melted and smooth.
  • Dip half of the apple slices completely in the bittersweet chocolate, letting the excess drip back into the bowl, and place on the prepared baking sheet. Dip the remaining apple slices in the white chocolate. Let sit at room temperature so the chocolate thickens a bit, 10 to 15 minutes.
  • Transfer the leftover dark and white chocolate to 2 separate small resealable plastic bags and snip a small corner off each bag. Pipe 3 to 4 dark chocolate concentric circles on the white chocolate-dipped apples and visa-versa. Drag a toothpick through the circles, starting the center and working your way out to create a spider web design. Refrigerate until hardened, 15 to 20 minutes.

2 large Granny Smith apples, stemmed
4 ounces chopped bittersweet chocolate
2 teaspoons coconut oil
4 ounces chopped white chocolate

SPIDERWEB FLORENTINES

Florentines may look as lacy and delicate as a spider web, but they're very simple to prepare. The heat of the oven does most of the work, transforming mounds of the easy-to-make dough into thin, crisp, nutty cookies. Just add a fanciful drizzle of chocolate and they'll disappear before you can say, "Boo!"

Steps:

  • Preheat oven to 350 degrees. Pulse together pecans and oats in a food processor until finely ground. Melt butter in a small saucepan. Add sugars and honey and cook over medium heat, stirring, until sugars are melted and mixture is simmering, about 3 minutes. Remove from heat and stir in pecan mixture, flour, salt, and cinnamon. Transfer to a bowl and refrigerate until firm, about 30 minutes.
  • Mound 2 teaspoonfuls of dough, one on top of the other, to form each cookie; place 2 to 3 inches apart on parchment-lined baking sheets. Flatten stacked mounds to 1 3/4 inches in diameter. Bake until cookies spread and are golden throughout, about 10 minutes. Let cool completely. Repeat with remaining dough.
  • Place chocolate in a bowl set over a saucepan of simmering water. Stir until melted; remove from heat. Pour chocolate into a parchment cone or resealable plastic bag; snip off a tiny corner. Pipe chocolate onto each cookie in a spiral, working out from center. Pipe lines from outside in and back again, all the way around. Let set at room temperature or in refrigerator before serving.

1/2 cup pecans, toasted
2 tablespoons old-fashioned rolled oats
6 tablespoons unsalted butter
1/4 cup granulated sugar
1/4 cup packed light-brown sugar
2 teaspoons honey
1 tablespoon all-purpose flour
1/4 teaspoon coarse salt
1/4 teaspoon ground cinnamon
5 ounces bittersweet chocolate, chopped

Steps:

  • Cream the butter and sugar. Add the egg and beat until fluffy. Blend in the vanilla. Sift in the flour, baking powder, and salt, mixing until just combined. Wrap the dough in plastic wrap and chill for 1 hour.
  • Preheat the oven to 350 degrees. On a floured surface, roll half of the dough to 1/8-inch thick. Cut into circles using a 3-inch round cookie cutter or the top of a drinking glass. Gather and reroll scraps. Repeat with remaining dough. Place the cookies on a greased baking sheet and bake for about 8 minutes, until just golden. Do not allow cookies to brown.
  • To decorate, melt the chocolate chips in the microwave in a heatproof bowl for 1 minutes. The chips may look unmelted, but stir them with a spoon to see if they have actually softened before putting them in for another minute, if necessary. Spoon the melted chocolate into a zipper-lock bag. Seal the bag, pressing out any air. Use a toothpick to make a very tiny hole in one corner of the bag to release a very thin stream of chocolate for writing.
  • To make the spiderwebs, spread white royal icing smoothly over the surface. Immediately, before the icing can set, pipe a spiral of chocolate over the surface, starting in the middle and working outward. Starting in the center, use a toothpick to pull outward through the icing, making a spiderweb design.
  • With beaters or a standing mixer, whip the egg white and lemon juice until frothy. At medium speed, beat in the confectioners' sugar, a little at a time, until the mixture is thick but still liquid enough to beat. Then beat on high until the mixture is thick and glossy, about 3 minutes. Cover the surface with plastic wrap while waiting to use it. Royal icing will set to a firm, glossy finish when applied to a cookie. The icing can be stored, tightly covered, in the refrigerator for up to a week.

1/2 cup (1 stick) unsalted butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chocolate chips
1 batch Royal Icing (see below)
Food coloring
1 egg white
1 teaspoon lemon juice
1 1/2 cups confectioners' sugar

Steps:

  • Prepare two baking sheets by lining them with aluminum foil.
  • Arrange the pretzel sticks in groups of eight, radiating out in a circular pattern. You should be able to fit about 6 groups to a baking sheet.
  • Place the white candy coating in a large microwave-safe bowl and microwave until melted, stirring after every 45 seconds to prevent overheating.
  • Scrape the melted candy coating into a large Ziploc bag and snip a hole in the corner. The hole should be about 1/8 of an inch thick. Alternately, you can use a pastry bag fitted with a small round tip, if you have one.
  • Pipe a round dot of candy into the center of each pretzel group to bind them together. Starting from the center, slowly draw a spiral onto the pretzels, gradually working your way out to the edges of the pretzel sticks. The line of candy coating should be thin enough to look like a spider web, but thick enough to hold together as it drapes over the pretzel sticks.
  • Once all of the webs are decorated, melt the chocolate chips for 45 seconds in the microwave. Stir until melted and smooth, and scrape the chocolate into a small Ziploc bag. Cut a very small hole in the corner of the bag.
  • Draw the spider in the center of the web. I find it's easiest to do the legs first: pipe eight very thin lines radiating out from the center. Finish the spider with a large blob in the middle for the body. Repeat with remaining webs.
  • Refrigerate the webs for about 10 minutes, or until the candy coating sets. Carefully peel the foil off the backs to serve.
