Stanley Tucci's Steak Oreganato Recipe - (5/5) image

Steps:

  • 1 top round beef steak (1 1/2 - 2 pounds) The steak should be 1/2-inch thick. If necessary, pound it between two sheets of waxed paper to achieve this thickness. 2 tablespoons butter 2 tablespoons olive oil Warm the butter and olive oil together in a large saute or cast-iron pan set over medium-high heat. When the butter is foaming rapidly, add the steak and fry to brown on one side, about 3 minutes. (If the steak is larger than your saute pan, cut it in half) Kosher salt Freshly ground pepper 1/2 cup dry red wine 1/2 teaspoon dried oregano Turn, and season with salt and pepper. Brown the other side, about 3 minutes. Remove from the pan to a warm platter and set aside. Add the wine and oregano to the pan, scraping up any meat that may have stuck to the bottom. Simmer to sweeten the wine, about 1 minute. Meanwhile, cut the meat into six equal portions. When the wine sauce is ready, pour it over the meat and serve immediately.

Steps:

  • Coat the pork chops with flour that has been mixed with salt and pepper.
  • Heat half of the olive oil in a large nonstick pan over medium-high heat.
  • Add the pork chops and saute for 3-4 minutes per side.
  • Remove from the skillet.
  • Add the white wine or broth and boil for 1 minute.
  • Add the remaining olive oil and the garlic and saute for 2 minutes.
  • Add oregano and thyme and cook for 1 minute.
  • Put the pork chops back in the pan and coat them with the garlic and oregano.

Steps:

  • Mix oregano, parsley, garlic, salt, and pepper in a bowl and rub chicken pieces well with it.
  • Put chicken into well greased baking pan.
  • Whisk olive oil and lemon juice together and pour it over the chicken.
  • Set the chicken in the oven about 8 inches from the broiler.
  • Broil 13-15 minutes, basting once with the pan juices.
  • Turn chicken over and baste.
  • Broil another 13-15 minutes basting often, until the juices from the meat are no longer pink.
  • Remove from oven and let rest for 5 minutes.

  • Combine lemon juice, oil, garlic and oregano in a sealable plastic bag. Add chicken, close and shake. Marinate in refrigerator 3 hours or overnight, turning occasionally.
  • Preheat oven to 350°.
