STEAK PASTE
Another recipe from my Mother-in-law. This is a lovely old fashioned meat paste to spread on sandwiches. My husband and his oldest 2 sons absolutely loved this in days gone by. The recipe does not state what type of steak to use. I have made this several times with a cheaper cut and it just lovely. (Not sure of quantity this makes as I haven't made it for a long time. Also depends on the size jars you use. I will amend this when I make it again and can state how much it makes) Also note: Recipezaar wants to change the ingredient of "Anchovy sauce" to anchovies, sauce. This is actually a sauce that you can buy here in Australia.

Steps:
- Remove any fat from the steak.
- Place meat into a double-boiler and cook for 4 hours.
- Place meat (and juices) into blender with butter and blend to a paste. Add other ingredients and blend to mix.
- Place into sterilized jars. Store in refrigerator.
STEAK BOURGUIGNON
Steps:
- Rest the steaks at room temperature for 20 to 30 minutes.
- Meanwhile, add the bacon to a large skillet and place over medium heat to cook until crisp, about 6 to 8 minutes. Remove the bacon to a plate or bowl leaving the fat behind and add in the mushrooms. Season with salt and pepper and cook until lightly golden, about 5 minutes, stirring occasionally. Add the cocktail onions and continue to cook until the mushrooms are golden brown, about 5 minutes.
- Peel and mince one clove of garlic and add to the pan. Cook for 30 seconds. Transfer to the plate with the bacon. Increase the heat to medium-high. Dry the steaks with paper towel and rub with olive oil. Season well with salt and pepper. Add the steaks to the pan and cook for 3 to 4 minutes per side, or until deeply golden brown and cooked to medium-rare. Use tongs to hold each steak on its side to render the fat cap, about 1 minute. Remove the steaks to a plate or cutting board, tent loosely with aluminum foil and allow them to rest for 10 minutes while you prepare the sauce.
- Reduce the heat to medium. Add the butter, thyme and remaining clove of unpeeled garlic. Cook for 30 seconds. Sprinkle in the flour and whisk together, then add in the tomato paste and cook for about 1 minute. While whisking, slowly pour in the wine and beef broth. Bring the mixture to a simmer and cook for 5 minutes to thicken. Add the sugar as well as the mushrooms, onions and bacon into the sauce and continue to simmer until thick and heated through. Season to taste with salt and pepper and keep warm on low.
- Slice the steaks into 1-centimeter (1/2-inch) thick slices and divide between two plates. Spoon the sauce and veg over the steaks and serve topped with some fresh thyme leaves.
SPICE PASTE FOR STEAK:

- Combine all ingredients but steak in small bowl. Rub mixture over both sides of steaks. Cover and refrigerate at least 1 hour and up to overnight.
- Prepare barbecue or preheat broiler. Grill or broil steak to desired doneness, about 4 minutes per side for medium rare.
STEAK WITH RED WINE-SHALLOT SAUCE

- Remove the steak from the refrigerator 30 minutes before cooking. Heat a large heavy-bottomed skillet over medium-high heat. Pat the steak dry and season generously with salt and pepper on all sides. Place the steak, standing up on the strip of fat, in the pan and hold it with tongs until the fat renders and the pan is slick, about 2 minutes.
- Place the steak flat in the pan and sear until deep brown on one side, 4 to 5 minutes. Turn and cook on the other side until a thermometer inserted sideways into the thickest part registers 120 degrees for medium-rare, 3 to 4 more minutes. Transfer to a cutting board and let rest 10 minutes. Reserve the drippings in the skillet.
- Add the shallot to the drippings and cook over medium heat until golden, about 2 minutes. Add the wine and scrape up any browned bits with a wooden spoon. Bring to a boil and cook until reduced by half and slightly syrupy, about 7 minutes; remove from the heat. Whisk in the butter, one piece at a time, to make a glossy sauce. Add 1/2 teaspoon salt and 1/4 teaspoon pepper or season to taste. Slice the steak against the grain and serve with the sauce.
MISO STEAK
Steak doesn't have to be a heavy meal - give it a Japanese-style marinade for a low-fat supper

- Tip the miso paste, Sherry or sake, sugar and garlic into a sealable food bag. Season with a generous grinding of black pepper, then squash it all together until completely mixed. Add the steak, gently massage the marinade into the steak until completely coated, then seal the bag. Pop the bag into the fridge and leave for at least 1 hr, but up to 2 days is fine.
- To cook, heat a heavy-based frying pan, griddle pan or barbecue until very hot. Wipe the excess marinade off the steak, then sear for 3 mins on each side for medium-rare or a few mins longer if you prefer the meat more cooked. Set aside for 1 min to rest. Carve the beef into thick slices and serve with a crunchy salad made with the spinach, cucumber, celery, radish and sesame seeds.

STEAK & TOMATO-BASIL PASTA

- Cook pasta according to package directions; keep warm.
- Meanwhile, in a large saucepan or Dutch oven, heat oil over medium heat. Add onion and garlic; cook and stir until tender.
- Add remaining sauce ingredients.
- Bring to a boil; reduce heat to low.
- Simmer, uncovered, 10 minutes, stirring occasionally.
- Place beef steaks on grid over medium, ash-covered coals.
- Grill steaks, uncovered, 13 to 15 minutes (15 to 18 minutes for top loin steaks) for medium rare to medium doneness, turning once. Season with salt and pepper.
- Trim fat from steaks.
- (Cut top loin steaks crosswise in half.) Combine tomato sauce, basil, cheese and pasta; toss to coat. Serve steaks with pasta.

GRANNY WISTRAND'S MEAT PASTE
An old meat paste recipe that was given to my mother in the 1950's. It is very easy to make and goes well on crackers as pate or on sandwiches. I recently made it as my grandson who is 14 months won't swallow lumpy food and I found this to be an excellent way to get him to eat a little meat.

- Chop the steak and bacon.
- Place all ingredients in a bowl
- Place bowl in large pot with water that comes approximately half way up the sides of the bowl.
- Cover with lid and steam for 3 hours.
- Mince or blend all ingredients until smooth.
- Pour into jars and seal with melted butter or sealing wax.
- Store in fridge .
