  • Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes. Spoon into a serving bowl and top with remaining buttermilk, brown sugar, and cinnamon.

I found this on Alton Brown's Good Eats and it is delicious. Adding the step of toasting with butter really adds to the flavor. Plus, adding the (already) boiling water to the toasted grains and letting it cook without constant attention (like a pilaf!) makes preparation soooo easy. And the buttermilk adds richness to the mix. My family loves the hearty flavor and texture of Scottish (steel-cut) oats, and this is the best recipe I've ever found.

Heart Healthy Steel Cut Oatmeal (With Choice of Variations) image

Steps:

  • In a large pan, melt the margarine and add the oatmeal.
  • Stir the oatmeal into the margarine and toast it until it's golden brown, about 2 minutes.
  • Add the boiling water and reduce the heat to a simmer. Cover with a tight-fittig lid.
  • Simmer for 25 minutes. Watch the mixture carefully and stir to prevent overflow and sticking to pan.
  • After 25 minutes, add the milk to the oatmeal.
  • Stir gently and cook on low for an additional 10 minutes.
  • Scoop into a serving bowl and top with sweetener and milk, if desired.
  • Variations to be added at same time as milk.

  • *1/2 can pure pumpkin and 1 teaspoons pumpkin pie spice.

Steps:

  • Place a large, heavy bottomed pot with a lid over medium-high heat. Melt the butter in this pot.
  • Add the oats and toast, stirring often, about 3-4 minutes, until oats smell nutty.
  • Stir in 6 cups of boiling water and salt. Reduce heat to medium and cover. Stir frequently--every 5 minutes at first, and then every minute or so as the oatmeal thickens. Reduce the heat gradually to medium-low and adding up to a cup more boiling water if the mixture is too thick.
  • About 15 minutes after you've added the water, taste the oatmeal; it should be al dente, but not hard or raw tasting. For chewy oatmeal, cook about 20 minutes. For creamy oatmeal, cook up to 35 minutes.
  • Serve with desired toppings.
  • Optional Toppings:.
  • Milk, butter or cream.
  • Butter & sea salt.
  • diced pears or apples and pure maple syrup.

This is from McCann's website. I love that you can use the microwave and not have to worry about scorching your pot on the stovetop. Of course, you can always use a double boiler, but that can take a while. I always enjoy steel cut oats because they are more nutritious than rolled oats and have a nice, nutty texture. Note: Cooking times may have to be adjusted for your microwave oven wattage. I have 1000 watts and had to cook 5 minutes covered and 11 minutes uncovered.
