In the summer, I don't like to prepare or eat large meals, so I often make salads. I'm always on the outlook for new and interesting recipes, and this one is a winner that I like to make for company. -Rhonda Crowe Victoria, British Columbia

STIR-FRIED SPINACH WITH GARLIC AND LEMON ZEST
This recipe comes from Williams-Sonoma Essentials of Healthful Cooking. According to the intro they gave to the recipe "Spinach is one of the most nutritious vegetables." It went on to say that when it was cooked its nutrients become even more concentrated. It is high in iron, potassium and vitamins A and C; the leaves are rich in leutine and zeaxathin, phytochemicals that protect vision. Besides being healthy it is delicious!

STIR-FRIED SPINACH WITH GARLIC
"Spinach has often been regarded with disdain in the west, probably because it is usually overcooked. This is a delicious, time-honored, southern Chinese recipe. The spinach is quickly stir-fried and then seasoned. It is very simple to prepare." Ken Hom from CHINESE COOKING. (We halved this recipe last night and enjoyed it hot with Mr. Hom's FISH IN HOT AND SOUR SAUCE. Wonderful!)
