STRAWBERRY BANANA GELATIN SALAD WITH PECANS
My grandmother loved to make this salad for us when we were young. She made it for the kids, but all the adults loved it too. The cooking time is actually the chill time. My grandmother was from the state of Oklahoma, and pecans are native to Texas. Therefore, this recipe represents the Southwestern region of the U.S.

Steps:
- Prepare gelatin with water according to the directions on the package. Refrigerate until slightly set, but not yet firm.
- Meanwhile place hulled and sliced strawberries in a small bowl. Add sugar and leave at room temperature while the gelatin sets in the refrigerator.
- When the gelatin is slightly set, add sliced strawberries, sliced banana, and chopped pecans. Stir gently to mix. Return gelatin to the refrigerator until firm.
- Can be garnished with a tablespoon of whipped cream per serving, if desired.

- Combine water and jello mix until combined. Add strawberries and stir until the berries are thawed. Add mashed bananas to the jello mixture. Place sliced bananas in bottom of 8x8-inch glass dish and pour 1/2 jello mixture on top. Refrigerate both jello mixtures until firm (at least an hour). Top the jello in the glass dish with cool whip and spoon remaining jello on top. Refrigerate again until firm and serve.

- In a small bowl, whisk the oil, 1/4 cup sugar, vinegar, onion, mustard and salt until sugar is completely dissolved; set aside. , Place pecans in a small heavy skillet. Cook over medium heat for 1-2 minutes until nuts are toasted. Sprinkle with remaining sugar. Cook and stir for 2-4 minutes or until sugar is melted. Spread on foil to cool. Break apart., In a large serving bowl, combine the lettuce, strawberries, cheese, sunflower kernels and sugared pecans. Drizzle with vinaigrette; toss to coat.

- In a bowl, dissolve strawberry gelatin in boiling water; stir in cold water. Pour into a 13-in. x 9-in. dish coated with cooking spray; refrigerate until set., Meanwhile, in a small bowl, sprinkle unflavored gelatin over cold water; let stand for 1 minute. In a saucepan over medium heat, heat cream (do not boil). Add softened gelatin; stir until gelatin is dissolved. Cool to room temperature. , In a bowl, beat cream cheese, sugar and vanilla until smooth. Gradually add the unflavored gelatin mixture; mix well. Carefully pour over the bottom layer. Refrigerate until set, about 1 hour. , For top layer, dissolve strawberry gelatin in boiling water; stir in cold water. Cool to room temperature. - In a bowl, dissolve gelatin in water. Stir in strawberries, pineapple, bananas and nuts.
- Pour half of the mixture into a 13" x 9" x 2" dish. Refrigerate for 1 hour or until set.
- Set the remaining gelatin mixture aside.
- Combine the sour cream, sugar and vanilla; mix well. Spread over the chilled gelatin. Spoon remaining gelatin mixture over top.
- Chill overnight.
EASY STRAWBERRY JELLO SALAD WITH COOL WHIP
Steps:
- Boil one cup water on stove top, and mix into bowl with jello powder in mixing bowl. Add in one cup cold water and stir. Chill jello, preferably in a shallow pan, for about 45 minutes or until it is completely cool, just starting to set. Pour the jello into a large mixing bowl. Mix the jello up vigorously, for about one minute. Using an electric mixer is great for this step. But watch out it splashes. This breaks up any jello bits that have started to set, and adds air to the mix. Then fold in the Cool Whip and then strawberries. Mix completely, but be gentle and don't deflate the mix by stirring too aggressively. If you want to add in mini marshmallows, do it now. Add them in about 1/2 cup at a time to make sure you don't overdo it. Transfer to a 9×13 pan for serving, or into individual dishes if you prefer. You can top with whipped cream and sliced strawberries if you prefer. If you want to dress up this dish, spread a spoonful of strawberry jam in the bottom of a glass dessert dish or shallow glass. Then add the salad mix. After the dish has chilled, dollop with some fresh whipped cream and a slice of strawberry.
