Steps:
- Mix all the ingredients except the 3 ounce box of gelatin. Cover mixture and place in the refrigerator overnight. The next day, roll mixture into strawberry shapes.
- Place the 3 ounce box of gelatin in a plate, and roll the shaped strawberries in the gelatin until coated. Place bits of mint leaves to create the stems; secure the stems with a piece of toothpick.

I love to enjoy a couple of these rose-tinged cookies with a cup of tea. I make the sweet pink sugar dust by pulsing freeze-dried strawberries with powdered sugar. For a less dense cookie, you can make them half as big.

- For the cookies: Beat the butter and powdered sugar with an electric mixer at medium speed until creamy. Beat in the vanilla. Combine the flour and salt in a medium bowl, then add to the butter mixture and beat until combined. Refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F.
- Scoop the dough into 1-inch balls using a cookie scoop and place 2 inches apart on parchment paper-lined baking sheets. Bake the cookies until golden brown on the bottoms, 13 to 15 minutes.
- For the strawberry sugar dust: Meanwhile, pulse the strawberries in a food processor until it forms a powder. Add the powdered sugar and pulse until combined.
- Roll the warm cookies in the strawberry powdered sugar and transfer to wire racks to cool. Roll in the strawberry powdered sugar again, if necessary, after cooled.

- Crush the Golden Oreo cookies. I used a blender, but you can use a small food processor, or you can place the cookies in a sealed plastic bag and smash them with a meat mallet! I found that the blender worked best when I did half the cookies at a time, rather than trying to crush all 36 at once. Use a fork to stir the mixture up between blends to get the finest consistency.
- Crush the freeze dried strawberries. I used a blender to make fine crumbs but you could chop them into small pieces if you want larger pieces of them in your Oreo balls. Add the strawberries to the cookie mixture and mix well.
- Use a cookie scoop to measure out about 1.5 TBSP of the cookie mixture and roll each scoop into a ball. Place Oreo balls on a parchment or wax paper lined cookie sheet.
