Steps:

  • Remove string from pods and trim off the blossom end. Make a small slit on flat side of pod. Soak pods in ice water for about 1 1/2 hours. Drain and dry pods.
  • Put cream cheese in a pastry bag and pipe enough cheese into pods until full. Arrange pods on a platter lined with spinach or lettuce. Garnish each pod with a bit of cream cheese studded with the appropriate number of peas, depending on how many the mother-to-be is expecting.

Steps:

  • In salted, boiling water, blanch (boil rapidly in lots of water) snow peas for 30 seconds.
  • Cool in cold water, drain, and set aside.
  • Blend the rest of the ingredients until smooth.
  • With a sharp pairing knife, split the snow peas along the curved side.
  • Fill each snow pea with filling, using a small spatula or pastry bag with tip.
  • I have used a ziplock bag with a hole cut in the corner.
  • Can be made the day before, refrigerate, and serve chilled.

Steps:

  • In a bowl, beat cream cheese with the lemon juice until smooth.
  • Add crabmeat and onion and mix well.
  • Season to taste with salt and pepper.
  • Cover and refrigerate for at least an hour (until mixture is firm; its easier to handle this way).
  • Bring a large pot of water to a boil and blanch the pea pods (about 45 seconds).
  • Remove the peas and immerse in a large bowl of cold water to stop the cooking process.
  • Drain on a paper towel and pat dry.
  • With the point of a sharp knife, split open the curved seam of each of the peas.
  • Using a small spoon or cocktail fork, fill each pea with about 1 1/2 teaspoons of the crab mixture.
  • Arrange on a platter and garnish with the red pepper slices.

Steps:

  • For the yogurt sauce: Mix the yogurt, dill, garlic, salt and oil in a bowl.
  • For the stuffed sweet peppers: Preheat the oven to 400 degrees F. Heat some oil in a pan. Add the onions and cook until soft. Add the carrots and cook, stirring occasionally, until soft. Transfer the onion mixture into a large mixing bowl. Fold the pork into the mixture. Add the rice, savory, dill, salt, pepper and paprika and blend well.
  • Fill the peppers with the pork mixture. Place the peppers on a baking pan with raised sides. Add enough water to barely cover the bottom of the pan. Cover the pan with foil and bake, about 30 minutes. Uncover the foil and bake, about 3 minutes. Serve the peppers with the yogurt sauce.

Steps:

  • Bring 1-1/2 qt. (6 cups) water to boil in large saucepan. Add snow peas; cook 30 sec. Drain. Immediately plunge into bowl of ice water; drain and pat dry. Diagonally cut off stem of each pea pod, then make lengthwise cut in one long side of each pod to make pocket.
  • Cut thin slice off top of each tomato; hollow out center with small melon baller or grapefruit spoon.
  • Mix reduced-fat cream cheese and mayo in medium bowl until blended. Stir in lemon juice, Worcestershire sauce and seasonings. Add shrimp and onions; mix well.

Crab-Stuffed Shells with Peas and Leeks image

Steps:

  • Melt 3 tablespoons butter in a medium skillet over medium heat. Add leeks, and cook until soft, about 5 minutes. Add peas; cook until bright green, about 3 minutes more. Transfer mixture to a bowl, and season with salt and pepper. Stir in the crab-meat; cover with plastic wrap, and refrigerate until ready to assemble.
  • Melt remaining 6 tablespoons butter in a large saucepan over medium heat. When bubbling, add flour. Cook, whisking constantly, 1 minute. While whisking, slowly pour in milk. Continue cooking, whisking constantly, until mixture bubbles and thickens. Remove from heat; stir in cream and lemon juice, and season with salt and pepper.
  • Preheat oven to 375 degrees. Bring a large pot of water to a boil. Add salt and pasta shells; cook 2 to 3 minutes less than package instructions. Drain.
  • Meanwhile, in a small bowl, stir together breadcrumbs, garlic, parsley, and oil; set aside. Stir 1 cup cream sauce into reserved crab mixture. Pour another cup cream sauce into the bottom of a 9-by-13-inch baking dish.
  • Fill each pasta shell with a heaping tablespoon of crab mixture; arrange in baking dish. Spoon remaining sauce over shells, and sprinkle with remaining breadcrumb mixture. Transfer to oven; bake until mixture is bubbling and the top is golden brown, about 30 minutes. Let cool 5 minutes before serving.

Steps:

  • Remove stem end from snow peas, string them, and blanch in a large pot of rapidly boiling water for 30 seconds. Plunge them immediately into cool water to stop the cooking and preserve their beautiful green color.
  • With a small sharp knife, slit open the straight seam of each snow pea and pipe softened cheese into each one, using a small-tipped pastry tube, or spread with a small spatula. Garnish each pod with a small leaf of mint just poking out the top of the snow pea.

Stuffed Sweet Potatoes with Curried Chickpeas and Mushrooms image

Steps:

  • Preheat oven to 450°F. Toss chickpeas, mushrooms, curry powder, cumin, 2 Tbsp. oil, and 3/4 tsp. salt on a rimmed baking sheet. Divide mushrooms and chickpeas into separate piles and spread in a single layer.
  • Cut potatoes in half lengthwise. Rub with 1 Tbsp. oil and 1/2 tsp. salt and transfer cut side down to another rimmed baking sheet.
  • Roast vegetables and potatoes, rotating pans halfway through and arranging spinach over vegetables during the last 2 minutes of cooking, until chickpeas are golden brown and crisp and potatoes are fork-tender, about 25 minutes.
  • Meanwhile, juice limes to yield 6 Tbsp. juice. Blend yogurt, 4 Tbsp. lime juice, and 1/2 cup chopped cilantro in a blender until smooth.
  • Transfer spinach, mushrooms, and chickpeas to separate bowls. Transfer potatoes to a serving platter. Using the back of a spoon, gently push down in center of potato halves to create a divot.
  • Spoon vegetables into divots, then top with yogurt sauce and cilantro leaves.

  • Potatoes, chickpeas, and mushrooms can be cooked 3 days ahead; store separately, cover, and chill. Reheat in oven before serving.
