WHOLE-WHEAT WAFFLES WITH GREEK YOGURT AND MIXED BERRIES

Olive oil in the batter makes these better-for-you waffles extra crispy.

Whole-Wheat Waffles with Greek Yogurt and Mixed Berries image

Steps:

  • Preheat a Belgian-style waffle iron. Toss berries with 1/4 cup sugar, lightly mashing some with the back of a spoon.
  • In a large bowl, whisk together flour, baking powder, and salt. In another bowl, whisk together eggs, milk, oil, remaining 1/4 cup sugar, baking soda, and vanilla. Whisk wet ingredients into dry mixture just until combined.
  • Ladle 1 cup batter into waffle iron. Cook until golden and crisp, about 6 minutes. Repeat with remaining batter, whisking between batches for even cooking. Serve warm, with yogurt, macerated berries, and syrup.

2 cups mixed berries, such as raspberries and blackberries
1/2 cup sugar
3 cups whole-wheat flour
2 teaspoons baking powder
1 teaspoon kosher salt
4 large eggs
3 1/2 cups whole milk
1/2 cup extra-virgin olive oil
1/2 teaspoon baking soda
2 teaspoons pure vanilla extract
Greek yogurt and pure maple syrup, for serving

SUGAR FREE GREEK YOGURT WHOLE WHEAT WAFFLES

This is my family's favorite healthy Belgian waffle recipe that has whole grain goodness, no sugar, no oil, but isn't lacking in flavor or a fluffy texture. The base can be customized with add-ins such as blueberries, chocolate chips or mashed banana. If you like to meal prep, these waffles freeze and reheat well. I have successfully kept the prepared batter in the fridge overnight, although you may have to thin with water to get the right consistency. ON SERVING SIZE: The serving amount will vary based on the size of waffle iron used."

Sugar Free Greek Yogurt Whole Wheat Waffles image

Steps:

  • In a large bowl combine the first five ingredients (flour, baking powder, baking soda, salt, cinnamon) and zest if using; stir to mix.
  • In a medium bowl whisk together the yogurt and egg until smooth. Slowly add the milk (I use plant-based), water and vanilla stirring after each addition.
  • Pour the wet ingredients into the dry; stir until combined. The batter will be a bit lumpy. Let sit 10 minutes.
  • Meanwhile, prepare and preheat your waffle iron as needed.
  • After the batter has rested, check the consistency. It will be thick but spreadable.
  • Cook the waffles in accordance with your waffle iron. My 7" Belgian uses about 1/2 cup of batter per waffle.
  • Top with pure maple syrup, fruit or whatever you fancy and enjoy!

  • In a large bowl, beat the eggs. Beat in the milk, Greek yogurt, molasses, butter and vanilla. Mix in the oats and allow to sit for 5 minutes (this allows to oats to soften so they cook better).
  • In a separate large bowl, whisk together the spelt flour, quinoa flour, salt, baking soda, and baking powder. Make a well in the middle, and once the wet ingredients are ready, pour everything in and mix together.
  • Brush the waffle with melted butter. Pour or scoop the waffle batter into a hot waffle iron (I used a 1/3 cup measuring cup for each waffle, but waffle makers vary). Cook waffles for about 4 minutes each, until cooked through. Once done, transfer the waffles to a cooling rack.
