SUNDAY MORNING COFFEE CAKE

This tasty, old-fashioned coffee cake, with a cinnamon-sugar streusel topping, cuts nicely for company and your family will love it, too. Serve it for breakfast or as a mid-afternoon dessert with a cup of coffee or tea. Field editor Lavonn Bormuth of Westerville, Ohio shared the recipe.

  • Beat butter, sugar and salt in a small bowl until crumbly. Add the egg, milk and vanilla; mix well. Combine flour and baking powder; add to butter mixture. Transfer to a greased 8-in. square baking dish., For topping, in a small bowl, combine the sugar, flour and cinnamon; cut in butter until mixture is crumbly. Sprinkle over batter., Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack for 10 minutes. Serve warm if desired.

Steps:

  • Grease/flour two 8-inch round pans or one 13x9 pan.
  • (I use the 13x9 pan).
  • In mixing bowl, combine the flour, sugar, and salt.
  • Toss together.
  • Then add the shortening.
  • Using a fork or pastry blender, work shortening into the dry ingredients until the mixture is in fine crumbs.
  • Scoop out 1/2 cup of the crumbs and set aside.
  • This will be used as topping later.
  • To the rest of the crumbs, add the baking powder, baking soda, cinnamon, and nutmeg.
  • Mix well.
  • Add the buttermilk and eggs.
  • Stir until blended.
  • The batter should not be smooth.
  • Spread the batter in prepared pan (s).
  • Sprinkle batter with reserved crumbs.
  • Bake at 375 for 25-30 minutes, or until toothpick inserted in center of cake comes out clean.
  • Serve warm from the pan.
  • **Forthe buttermilk, I often use what milk I have on hand, with 1 TBSP vinegar added per cup of milk.

From TOH magazine. It sounds a lot like the Bisquick coffeecake I love but without using Bisquick (which I don't like to bake with). Cooking time includes 10 minutes cooling time. Note: I find the vanilla flavor to be a bit strong and makes it a bit too sweet for my taste. I don't think I'll use it in future, but I'll leave it in as optional for those who might like their coffee cake a bit more sweet than cinnamony.

Steps:

  • Preheat oven to 350 degrees F. Unwrap and chop the
  • 3 MUSKETEERS® Brand FUN SIZE®.
  • Measure 1 cup of chopped candy; set aside.
  • Combine the flour, baking powder and baking soda in a bowl; set aside.
  • Combine the butter and sugar in a bowl, then beat with an electric mixer on medium speed until light and soft, about 5 minutes.
  • Beat the eggs into the batter, one at time, until smooth.
  • Decrease the mixer speed to low, and beat in 1/3 of the flour mixture, followed by 1/2 of the sour cream. Stop and scrape again.
  • Beat in the remaining flour mixture and sour cream.
  • Fold in the chopped 3 MUSKETEERS® Brand FUN SIZE®, reserving the 1 cup of chopped candy for the crumb topping.
  • Give the batter a final mix with a large spatula. Set aside.
  • To make the crumb topping, stir the ingredients with a mixer until evenly blended.
  • Be sure to include the 1-cup of chopped 3 MUSKETEERS® reserved from Step 1.
  • Pour the cake batter into a greased 9 x 13-inch pan. Crumble the topping in an even layer over the entire surface of the batter.
  • Bake for 50-55 minutes.
  • Remove from the oven, transfer to a wire rack, and let cool completely.
  • Cut into 2-inch squares (4 lines x 6 lines), and sprinkle a little bit of confectioner's sugar on top.

  • combine streusel mixture and set aside.

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a 9x9-inch baking pan.

  • Turn on the oven to 375°.
  • Choose a mixing bowl that can subsequently contain all the ingredients. Put in the eggs and sugar and beat them until they are foamy and form yellow ribbons.
