I learned to make white sauce in Home Ec too many years ago to count. It can be used as a base for lots of dishes. I use it for macaroni and cheese for my granddaughter.

  • In a small saucepan over medium heat, melt butter. Add flour and stir until the butter and flour are well combined. Pour in milk, stirring constantly as it thickens. Add more milk depending on desired consistency.

  • Gently bring 500ml whole milk to the boil in a small saucepan with 1 halved onion, studded with 1 bay leaf and 2 cloves. Turn off the heat and leave to infuse for 20 mins.
  • Melt 50g butter in another saucepan, then add 50g plain flour. Stir continuously until a paste forms - this is called a roux. Continue cooking for 2 mins.
  • Remove the onion, bay and cloves from the milk with a slotted spoon and discard. Add the infused milk to the roux gradually, stirring as you go, until you get a smooth sauce. Cook for 5-10 mins, stirring continuously, until the sauce has thickened. Season to taste.

Steps:

  • Place the butter in a preheated suacepan and melt the butter down (on low heat).
  • Once the butter is melted down add the plain flour.
  • Stir well and cook the mixture of butter and plain flour which should go a bit lumpy and dry at this stage.
  • Very important that you cook this well (2-4 minutes).
  • Remove from heat and slowly, very slowly add the milk and stir in.
  • The sauce should now be getting smooth.
  • If it is lumpy you have been adding the milk to fast.
  • Keep adding the milk until the desired thickness is achieved.
  • Add the paprika for a bit of extra kick.
  • Any other herbs or things like lemons can be added for a bit of extra taste.
  • This sauce is used in my fish and white sauce and my tuna mornay recipes as well so look for them.

Steps:

  • Heat the milk and the butter (3 tablespoons butter will make it richer) on low heat until the butter melts and the milk starts steaming, stirring often.
  • Add the salt and flour and continue to stir occasionally until the sauce reaches a light boil.
  • Add the rest of the spices. Keep at it until the sauce boils down and is thick enough to cling to a spoon but is still liquid. The sauce thickens more as it cools.
  • Let it cool down a little bit. Add it to the pasta and mix until they are well coated. Add Parmesan on top if you like.

  • SAUCE--------------.
  • Place the butter in a preheated suacepan and melt the butter down (on low heat).

  • When serving place 2 pieces on each persons plate and pour the white sauce over the fish and be sure to garnish with some parsley.
  • Enjoy.
