SUPERB RYE BREAD (BREAD MACHINE)

This is a good basic bread machine recipe for rye bread. I don't remember where I got it, but it's one I make all the time.

Superb Rye Bread (Bread Machine) image

Steps:

  • Bring all ingredients to room temperature and add to bread machine baking pan, in order suggested by manufacturer.
  • Select basic setting (I use basic setting, medium size, light crust) and push Start.

1 cup rye flour
2 3/4 cups bread flour
1/3 cup brown sugar (I use the gruanulated type)
2 teaspoons caraway seeds
1 1/2 teaspoons salt (I use kosher salt)
2 tablespoons butter
1 1/2 cups warm water
1 1/2 teaspoons dry yeast

RYE BREAD (BREAD MACHINE)

I adapted this recipe from one that came with my breadmaker. This recipe makes a 1.5 pound loaf. Enjoy!!

Steps:

  • Add ingredients to breadmaker in order.
  • Set breadmaker to Whole Wheat setting.
  • Select 1.5 pound loaf.
  • Select crust color.
  • Start breadmaker. :D.

room temperature water (to equal 1 cup and 1 TBL when added to egg)
3 tablespoons oil
3 tablespoons honey
2 tablespoons dry milk
1 1/2 teaspoons salt
1 1/2 cups bread flour
1 1/4 cups rye flour
2 tablespoons caraway seeds
2 teaspoons active dry yeast

CREAMY RYE (BREAD MACHINE)

Get out the pastrami and cheese for this superb rye bread! This bread offers a rich, full flavor that travels easily from the breakfast table to the dinner table. This one is definately a keeper. I hope you think so too!

Creamy Rye (Bread Machine) image

Steps:

  • Combine according to your manufacturer's directions.
  • Success Hints: For a different kind of snack, top with Simple Chutney Cheese Spread (see recipe I posted) This recipe can be made using regular or rapid rise cycles.

7/8 cup water, lukewarm
2 1/2 cups white bread flour
2 teaspoons caraway seeds
1 1/2 teaspoons salt
2 tablespoons butter
2 tablespoons brown sugar
3/4 cup rye flour
1 1/2 teaspoons cocoa powder, unsweetened
1/2 cup sour cream
1 1/2 tablespoons molasses
1 1/8 teaspoons fast rise yeast or 2 teaspoons active dry yeast

Rye Bread for the Bread Machine image

Steps:

  • Add ingredients to your bread machine according to manufacturer's directions.
  • Use whole wheat cycle for baking. OR use the dough cycle, and bake it in the oven. If doing this let bread rise again in greased bread pan in a warm place and cover with a damp cotten towel till the dough almost doubles.
  • Bake for 35 minutes at 350 till golden. I usually remove it from the pan after 25 minutes and continue baking it on a baking stone for a crusty crust!
  • Rub cold butter on the warm loaf to make it extra yummy.

2 tablespoons cold water
1 tablespoon olive oil
1 1/2 tablespoons honey
3/4 teaspoon salt
2 teaspoons caraway seeds
1 cup rye flour
1 1/2 cups bread flour
1/4 cup white wheat flour

3 tablespoons dry milk

Steps:

  • Measure ingredients into baking pan in the order recommended by the manufacturer.
  • Insert pan into the oven chamber.
  • Select Whole Wheat Cycle, press start.
  • When the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
  • Let cool to room temperature before slicing.
