ORANGE GLAZED CHICKEN WINGS

Steps:
- Place a 6-quart saucepan with a steamer basket and 1 inch of water in the bottom, over high heat, cover and bring to a boil.
- Remove the tips of the wings and discard or save for making stock. Using kitchen shears, or a knife, separate the wings at the joint. Place the wings into the steamer basket, cover, reduce the heat to medium and steam for 10 minutes. Remove the wings from the basket and carefully pat dry. Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour.
- Preheat the oven to 425 degrees F.
- Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown.
- During the last 20 minutes of cooking the chicken, place the orange juice concentrate, hoisin sauce, honey, soy sauce, rice wine vinegar and red pepper flakes into a small saucepan, stir to combine and bring to a simmer over medium-high heat. Reduce the mixture to about 1/2 cup, approximately 5 to 10 minutes. Remove from the heat and allow to cool at least 5 minutes.
- Remove the wings from the oven and transfer to a large mixing bowl along with the glaze and toss to coat. Serve warm.
HOT AND STICKY WINGS
Steps:
- Light broiler. Line a baking sheet with aluminum foil; set aside. Rinse wings with cold water and pat dry with paper towels. Place wings on baking sheet skin-side up. Broil wings for 8 to 10 minutes while preparing sauce. NOTE: this step can be omitted, but produces a better tasting wing.
- Place wings in the crock of 4 quart slow cooker. In a bowl, stir to combine remaining ingredients. Pour over wings and stir to coat. Place lid on slow cooker and cook on high setting for 2 1/2 to 3 1/2 hours.
GINGER-ORANGE WINGS

- Cut chicken wings into 3 sections; discard wing tip section. In a large bowl, combine the flour, seasoned salt and garlic salt. Add chicken wings, in batches, and toss to coat. In a large cast-iron or other heavy skillet, fry wings in oil, in batches, until golden and crispy, 3-4 minutes., Drain pan drippings; return all chicken to the skillet. - Preheat an outdoor grill for medium heat and lightly oil grate.
- Wash the wings well and pat dry with paper towel. Season the meat with cayenne, salt, and pepper.
- Cook the chicken wings on preheated grill until cooked through and juices run clear, 20 to 30 minutes depending on the size of the wings. Brush the wings liberally using 1/2 cup of honey while they are cooking.

- Place chicken wings in a shallow dish or zip-top plastic freezer bag. Whisk together orange juice and next 6 ingredients.
- Add 1 cup orange juice mixture to wings; reserve remaining mixture for later use.
- Cover or seal, and chill 1 hour.
- Remove chicken from marinade, discarding marinade.
- Grill wings, covered with grill lid, over medium high heat 17 to 20 minutes, turning occasionally.
- Bring reserved orange juice mixture to a boil in a saucepan. Reduce heat, and simmer 25 minutes or until mixture is reduced by half.
- Toss warm chicken wings with 1/4 cup reduced orange juice mixture; transfer to serving platter and sprinkle with chopped green onions.

- Preheat oven to 350 degrees F. Place chicken in large zip lock bag.
- In small bowl, mix orange marmelade, teriyaki sauce, and crushed red pepper together. Pour over chicken, coat well.
- Place chicken in single layer on large metal pan (a cookie sheet works fine). Bake at 350 degrees for approximately 30 minutes or until juice runs clear. Sprinkle with salt and pepper if desired.
- note: I always stick mine under the broiler for a few minutes, turning once, because I like my wings to be crispy. You could also do these on a grill.

- Whisk first 7 ingredients in a medium bowl.
- Place half in a resealable plastic bag; add wings, and toss to coat.
- Refrigerate for at least 2 hours, turning bag occasionally.
- Cover and refrigerate the remaining marinade.
- Heat oven to 450 degrees.
- Line 2 rimmed baking sheets with aluminum foil.
- Put a wire rack in each baking sheet; spray each rack with non-stick cooking spray.

- Brush with the reserved marinade.
