- Place the potatoes and sweet potatoes in a large pot with enough water to cover. Bring to a boil. Cook about 15 minutes, until tender but firm. Remove from heat, and drain.
- Preheat the oven broiler.
- In a large bowl, mash the potatoes. Gradually mix in butter, heavy cream, chicken bouillon, brown sugar, and pepper. Transfer the mixture to a medium baking dish, and top with Monterey Jack cheese.
- Broil uncovered in the preheated oven 10 minutes, or until the cheese is melted and lightly browned.

- Heat oven to 425°F. Finely grate sweet potatoes into a bowl. Squeeze grated sweet potatoes in batches to release as much moisture as possible and place in another bowl; fluff with a fork. Stir in cheese, egg whites, rosemary and pepper. Line a large cookie sheet with parchment paper. Spoon 1 rounded tablespoon batter onto cookie sheet and flatten into a thin, 2- to 2 1/2-inch round. Repeat with remaining batter, leaving 1 inch between rounds. Bake until edges and underside are crisp and browned, 13 to 15 minutes. Remove from oven, let cool slightly and remove from parchment. Serve warm with Rosemary-Balsamic Cream .

- Fill a large pot with 1" water. Place potatoes in a steamer basket and lower into pot. Cover pot and bring to a boil. Steam until potatoes are fork-tender, 25-30 minutes.
- Place an oven rack about 8" from broiler; preheat broiler. Coat a rimmed baking sheet with 1 Tbsp. oil. Arrange potatoes skin side down on prepared pan. Score or lightly mash flesh with a fork; season all over with salt and pepper. Drizzle with remaining 2 Tbsp. oil, then top with cheese (taking care to keep it on the potatoes, not the pan). Broil potatoes, watching carefully to make sure they don't burn, until cheese is bubbling and golden brown, 3-5 minutes.

- Heat oven to 400 degrees.
- Cook bacon, cool, and crumble. To a 12-cup muffin pan, add equal amounts of bacon grease to each muffin cup.
- To a medium bowl, add the hash browns and gently blend in 1 1/2 cups of the shredded cheese. Press about 2 tablespoons of the hash brown and cheese mixture into each muffin cup. Bake in oven for 18 - 20 minutes or edges are crispy.
- While hash brown cups bake, peel film at corner of mashed potatoes and heat on high for 3 minutes in microwave. Remove from microwave and stir.
- Remove hash brown cups from the oven. Spoon in equal amounts of mashed potatoes. Top with equal amounts of remaining cheese and place under broiler for 5 minutes or bake in the oven until cheese is melted.
