Steps:
- Whisk together juice, oil, chili sauce, ginger and green onions.
- Marinate shrimp for 30minutes in half the marinade.
- Reserve remaining marinade.
- Heat grill to medium high heat.
- Thread 3 shrimp on each skewer
- Place on grill.
- Brush with reserved marinade.
- Grill 4 minutes.
- Brush with marinade again.
- Flip.
- Brush with marinade.
- Grill until done.
- Brush with marinade
- Serve.

SWEET AND SPICY SHRIMP TACOS
Steps:
- 1. Blend the light brown sugar, chili, cumin, paprika, and lime zest together in a medium bowl. Add all but 2 teaspoons of the spice mixture to a resealable plastic bag. Add the shrimp and the olive oil to the bag. Seal the bag and then turn over a couple times to coat the shrimp evenly. Set aside to marinate for 15 minutes.
- 2. Meanwhile, combine the sour cream with the reserved spice blend. Stir in the cabbage and season with salt and pepper.
- 3. Preheat a grill or grill pan to high. Toast the tortillas about 1 minute per side. Transfer to a plate and wrap with foil to keep warm.
- 4. Remove the shrimp from the marinade and season with salt. Grill the shrimp turning once, until nicely browned and just cooked through, about 2 to 3 minutes per side. Tuck the shrimp into the warm tortillas with the cabbage, cilantro leaves, and squeeze lime juice over top. Serve.

- Heat the oil in a large nonstick skillet or wok over high heat. Add the garlic and ginger and cook, stirring, until fragrant, about 30 seconds. Add the shrimp and stir fry until pink but still translucent in the middle, about 2 minutes. Transfer the shrimp to a medium bowl with a slotted spoon. Add the onions and peppers to the skillet and cook, stirring, until lightly browned, about 3 minutes. Return the shrimp to the skillet along with the Thai Style Sweet & Spicy Chili Cooking Sauce. Cook, stirring, until the sauce glazes the shrimp, about 1 minute. Remove the skillet from the heat, season with salt, add the lime juice and sprinkle with the herbs. Serve with rice.
HONEY CHILE SHRIMP

- Heat the olive oil in a large skillet over medium heat.
- When the oil is hot, add the shrimp and sprinkle with salt and pepper. Cook, stirring, until the shrimp start to turn pink and are almost cooked through, 3 to 4 minutes. Add the lime zest and the whites of the green onions. Stir into the shrimp and cook until the onion whites soften, about a minute, then add the chile garlic paste, honey and lime juice. Stir to combine, then continue to cook until the sauce has a syrupy consistency, an additional 2 minutes.
- Transfer to a small platter and garnish with the green onion tops. Zest one of the lime halves over the dish, then cut the remaining half into wedges and serve alongside.
GRILLED THAI CHILE GARLIC SHRIMP

- Heat a grill to medium-high heat.
- Put the shrimp into a glass bowl. Whisk the remaining ingredients in a medium bowl and pour 1/2 to 2/3 if it over the shrimp. (Reserve the remaining marinade to brush on the shrimp during grilling.) Allow the shrimp to marinate for only 8 to 10 minutes or the lime juice will begin to "cook" the shrimp. Grill the shrimp, approximately 2 to 3 minutes per side while brushing with the reserved marinade. I use a silicone brush. Remove the shrimp from the grill to a platter and serve garnished with lime wedges.

- Place shrimp in bowl with dry sherry and salt and marinate for 30 minutes. Toss every so often.
- Heat a large wok or 12-inch skillet until very hot.
- While pan is heating, lay shrimp out on paper towels and pat dry.
- Add 2 tablespoons peanut oil to pan and heat until sizzling.
- Add half of the shrimp to the pan (they should be in a single layer) and stir-fry (cook, stirring continuously) until just pink but not cooked through, about 1-2 minutes.
- Transfer partially cooked shrimp to a plate, then add remaining two tablespoons of peanut oil to pan and heat until sizzling; add remaining shrimp and stir-fry as you did the first batch.
- When shrimp are just pink but not cooked through, add reserved shrimp back to pan along with ginger, garlic, sweet red chili sauce and jalepeno peppers; stir-fry about 1 minute more.
- Add the water, soy sauce, scallion greens and bell pepper and cook until the shrimp are cooked through, about 1-2 minutes.
- Do not overcook.
- Use a slotted spoon to transfer shrimp to serving dish.
- Continue to cook sauce until slightly thickened; turn off heat, stir in sesame oil, then pour sauce over shrimp.
- Serve with jasmine rice.

- Fill frying vessel with enough oil to cover 2 inches.
- Cut Wonton Wrappers in half to make an easier-to-eat size chip.
- Fry Wonton Wrappers on medium about 40 seconds each flipping half way though until golden brown.
- Set on paper towels and immediately salt. Move to serving dish and top with coleslaw mixture.
- Cut each shrimp into 3 pieces and toss in the corn starch to dredge. This will give you a light crunchy texture.
- Fry shrimp in batches on medium high about 2 minutes for each batch stirring with spider or slotted spoon to prevent clumping.
- Toss shrimp in sweet chilli sauce and assemble a spoonful atop each Wonton chip.

- Put the noodles in a medium heatproof bowl and pour over enough boiling water to cover and set aside for 2 to 3 minutes to allow the noodles to separate and then drain well.
- Meanwhile put sweet chilli sauce, lemon juice and honey in a small bowl and stir well to combine and set aside.
- Heat half of the oil in a large wok on high and add the prawns and stir fry for 1 to 2 minutes or until prawns just change colour and remove fromthe wok and set aside.
- Heat remaining oil on medium high and add the garlic and ginger and stir fry for 1 minute and then add the vegetables and stir fry for 1 minute and then add the water and cook covered tossing twice for 2 to 3 minutes or until vegetable are just tender.
- Add the noodles, prawns and sweet chilli sauce mix to the wok and toss for 2 minutes or until well combined and heated through.
- Remove wok from heat and toss in the basil leaves ande cashews.
- Divide the noodle mix between shallow bowls and serve straightaway.
- OPTIONS - for a gluten free and lower salt option replace the prawns with 200 grams diced skinless chicken breast and the noodles with 70 grams (1/3 cup) basmati rice boiled.
