Steps:
- Dissolve yeast in warm water. Let sit, undisturbed for about 10 minutes. You should see little bubbles appear. This tells you that the yeast is active.
- In a large bowl, mix oil, eggs, salt, sugar and water and yeast mixture together till blended.
- Add flour one cup at a time, mixing well after each addition.
- Knead till smooth and elastic.
- Let rise till doubled, about 1 hour and 30 minutes.
- repeat the kneading and rising.
- Punch down.
- Cut dough into 2 pieces.
- Let rise, covered for 10 minutes.
- Shape into 2 oblong loaves, about 14 inches long.
- Place on greased cookie sheets.
- Cover: let rise again, about 50-60 minutes.
- Cut slash down middle of bread or 3 slashes diagonally on top.
- Bake at 350 for 20 to 25 minutes.
MOM'S ITALIAN BREAD

- In a large bowl, dissolve yeast in warm water. Add the sugar, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; divide in half. Shape each portion into a loaf. Place each loaf seam side down on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. , Meanwhile, preheat oven to 400°. With a sharp knife, make 4 shallow slashes across top of each loaf. Bake 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

SWEET ITALIAN BISCUIT BREAD
This is a unique, biscuit-like Italian bread flavored with sweet Marsala and studded with dried fruits. Beautiful when served with Mascarpone cheese blended with a bit of confectioner's sugar and a touch of vanilla extract - heaven with coffee! It's unusual, and one of my favorites from the Silver Palate authors.

- Preheat oven to 350 degrees F.
- Butter and flour a 9x4 inch loaf pan.
- Cream together butter and sugar.
- Add eggs, one at a time, beating well.
- Beat in Marsala, vanilla and salt.
- Toss dried fruits with flour and stir mixture into batter until well-combined.
- Stir in hazelnuts.
- Pour batter into prepared pan.
- Bake about 1 hour, until slightly golden.
- Remove from oven, let stand 10 minutes.
- Place on a rack to cool completely.

ITALIAN SWEET AND SAVORY BREAD
A soft slightly sweet version of Italian bread made into two round loaves and flavored with Italian seasoning.

Steps:
- Place all bread ingredients in bread machine pan according to manufacturer's directions.
- Select dough cycle and check after 5 minutes of mixing.
- If needed, add 1 to 2 tablespoons water or flour.
- When cycle is complete, turn dough onto a floured surface and divide in half.
- Shape each half into a ball and flatten slightly.
- Place in two greased 9" round cake pans, cover and let rise until doubled (about 1 hour).
- Beat egg and water and brush over dough.
- Sprinkle with Italian seasoning.
- Bake at 350° for 20 to 25 minutes or until golden brown.
- Remove from pans and place on wire rack to cool.
SWEET ITALIAN HOLIDAY BREAD

- Preheat oven to 350°. In a large bowl, whisk flour, sugar, orange zest and baking powder. In another bowl, whisk eggs, milk and oil until blended. Add to flour mixture; stir just until moistened., Shape into a 6-in. round loaf on a greased baking sheet. Brush top with egg yolk; sprinkle with coarse sugar. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cover top loosely with foil during the last 10 minutes if needed to prevent overbrowning. - In a small saucepan, combine the first four ingredients. Cook and stir over medium heat until butter is melted. Remove from the heat; cool to 110° to 115°., In a large bowl, dissolve yeast in warm water. Add the butter mixture, eggs, extracts, nuts and cherries and 4 cups of flour. Beat until smooth. MAMA D'S ITALIAN BREAD
This is a basic delicious Italian bread.

- Add the sugar and yeast to the warm water and let proof.
- Stir in 4 cups of flour and beat until smooth. Cover and let rest for 15 minutes.
- Beat in the salt and then add enough remaining flour to make a stiff dough. Knead until as soft and smooth as a bambino's behind. Turn in a greased bowl, cover, and let double in size. (I put it in the oven with the light on - perfect rising temperature.)
- Once doubled, punch down and divide into three. Place back in the bowl, cover, and let rise.
- Once doubled again, punch down and form into three fat "footballs." Grease heavy cookie sheets and sprinkle with corn meal. Place the bread on the sheets, cover with a towel, and let rise.
- Once risen, mist with water and place in a preheated 450 degrees F (230 degrees C) oven. Mist loaves with water and turn occasionally while they bake. Bread is done when golden brown and sounds hollow when tapped on the bottom.

- Whisk together the oil, egg, and buttermilk in a small bowl.
