SWEET AND SOUR CHICKEN

Instead of deep-frying chunks of chicken, this streamlined take on an American Chinese restaurant favorite opts for stir-frying it. Sweetness comes from pineapple chunks and juice, plus a touch of brown sugar, while rice wine vinegar delivers that pleasing sour punch.

Steps:

  • In a large non-stick skillet, heat oil over medium-high heat. Season chicken strips with salt and pepper and add to pan. Brown chicken and remove to plate. Add red and green peppers and cook for 1 minute.
  • Stir in pineapple chunks, juice, sugar, vinegar and broth and bring to a simmer. Simmer until sauce begins to reduce. Stir in cornstarch mixture and bring liquid to a simmer. Stir in chicken strips and cook for 5 minutes. Serve over rice.

2 tablespoons vegetable oil
2 boneless chicken breasts, sliced into strips
Salt and pepper
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 cup canned pineapple chunks, drained with 1/2 cup reserved juice
3 tablespoons light brown sugar
3 tablespoons rice wine vinegar
1/4 cup chicken broth
4 teaspoons cornstarch, mixed with 4 teaspoons water
Cooked rice, for serving

Steps:

  • 1. In a skillet, heat oil to medium heat and saute green pepper and onion until crisp tender. Remove and keep warm. Add broth, pancake syrup, vinegar, and soy sauce to the skillet; bring to a boil.
  • 2. Drain the pineapple, reserving the juice and set pineapple aside. Combine cornstarch and the reserved juice and blend until smooth. Gradually add to broth mixture.
  • 3. Bring to a boil and cook and stir for 2 minutes or until thickened. Add chicken nuggets and cook 2 minutes. Stir in the pineapple and sauteed vegetables and heat through. Serve over rice. 4 servings.

1 medium green pepper, cut into chunks
1 large onion, cut into wedges
1 to 2 Tbsp vegetable oil
1 can(s) 14oz. can chicken broth
1/4 c cider vinegar
1 Tbsp soy sauce
1 can(s) 8oz. pineapple chunks
2 to 3 Tbsp cornstarch
2 1/2 c frozen chicken nuggets, thawed
hot cooked rice
1/2 c pancake syrup

  • In a bowl or plastic bag, combine bread crumbs and lemon-pepper seasoning. Add chicken pieces, a few at a time, and toss to coat., Heat oil in a skillet over medium heat. Cook and stir chicken for about 5 minutes or until juices run clear. In a small saucepan, combine sauce ingredients; stir until heated through. Serve with chicken.
