BACON APPLES
I cooked apples that I stuffed with brown sugar and cinnamon over a campfire as a dessert for my family when we went camping. In the morning we had bacon with our breakfasts and the kids marinated the bacon in the leftover apples! The bacon was good but we ate the apples after and they where surprisingly good!

Steps:
- Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire. Alternatively, preheat an outdoor grill.
- Place apples in a loaf pan. Combine brown sugar and cinnamon in a bowl; spoon into each apple.
- Place the loaf pan into the campfire or on the grill; cook for about 3 minutes. Carefully remove the pan from the fire and sprinkle bacon over apples. Place in the fire or on the grill for about 5 minutes more.

APPLE BACON RELISH
A favorite retaurant was featured making this dish to serve over pork tenderloin or chops. A true fall Southern dish.

Steps:
- Saute bacon until crisp & remove from pan. Crumble & set aside. Remove all but 1 T. of bacon fat from pan. Add onions to pan & saute until starting to turn golden.
- Add apples & garlic and saute 1 minute.
- Add sugar & vinegar & reduce heat.
- Cook 3-4 minutes or until apples are crisp tender. Add bacon.
- Add seasonings & stir to combine.

QUICK CABBAGE WITH BACON AND APPLES
Steps:
- Spread the bacon out in a large nonstick saute pan. Place over medium-high heat and cook until crispy, about 6 minutes per side. Remove the bacon and place on a paper towel-lined plate, leaving the fat in the pan. Once cool to the touch, crumble the bacon into bite-sized pieces.
- Reduce the heat to medium and add the cabbage to the pan. Cook, stirring frequently, until slightly wilted, about 4 minutes. Pour the apple juice, honey and vinegar around the sides of the pan. Cook, stirring occasionally, until the liquid has cooked off, 2 to 3 minutes more. Add the apples and sprinkle with 1 teaspoon salt and 3/4 teaspoon black pepper. Toss to combine. Turn off the heat and stir in the scallions and crumbled bacon.
- Transfer to a serving platter and serve warm.
BAKED APPLES AND BACON
Steps:
- Preheat the oven to 375 degrees F.
- Arrange the bacon on a sheet tray, sprinkle with some of the thyme and bake until crispy, about 12 to 15 minutes.
- Slice the apples horizontally to create 5 to 6 cross sections of the apple. On a separate sheet tray lined with a silpat or parchment paper lay the apples out in a single layer and drizzle with a little olive oil. Sprinkle a little sugar and thyme on each slice then bake in the oven until the apples begin to dehydrate and sugar has melted and caramelized, about 8 to 10 minutes
- To serve, lay the apple and bacon slices, alternating, in a long overlapping line on a serving platter. Or, break the bacon pieces in half and reassemble the apple slices back together, placing crispy bacon pieces in between each slice. Garnish with arugula and serve.
APPLE, CHEDDAR, AND BACON QUICHE
Sweet apples plus savory bacon equals a perfect quiche. We added a whole chopped poblano pepper last time and it complemented it very well.

- Preheat the oven to 450 degrees F (230 degrees C). Press pie crust into the bottom and up the sides of an 11-inch tart pan.
- Bake in the preheated oven until golden, 10 to 12 minutes. Remove and let cool.
- Reduce the oven temperature to 325 degrees F (165 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble.
- Heat bacon grease in the same skillet over medium-high heat. Add onion and saute until translucent, about 5 minutes. Add apple and cook until just tender, 3 to 5 minutes. Add garlic and saute until fragrant, about 1 minute. Remove from heat and stir in bacon.
- Whisk milk, sour cream, eggs, sea salt, and cinnamon together in a bowl.
- Layer apple mixture, Cheddar cheese, and egg mixture in the prepared crust. Sprinkle sage over top.
- Bake in the preheated oven until set, 30 to 40 minutes. Allow to cool before serving.

SAUTE OF CHICKEN LIVERS, BACON AND APPLES
My favorite chicken liver recipe. I serve with thin egg noodles. The recipe notes: do not stir the chicken livers around as you saute them; that prevents the development of the crisp, firm outside crust which is an agreeable characteristic of this dish. Recommended side dish: some kind of spinach or other preferred greens.

Steps:
- Pat livers dry.
- Saute the bacon with 1 T butter in a 10-inch skillet, until the bacon fat has rendered out.
- With a slotted spoon, remove the bacon bits and reserve until later. In the remaining bacon fat, saute the chicken livers over medium-high heat (in a couple of batches, if necessary). Remove livers and reserve.
- Remove all but 1 T of the fat in the skillet; in the remaining fat, saute the shallots until soft. Then add the apples, Calvados and heavy cream. With a wooden spoon, scrape up the browned particles in the bottom of the pan and incorporate.
- Return the chicken livers and bacon to the simmering cream and cook them about 3 minutes more, keeping the heat low so they do not toughen.
- Taste and adjust seasonings. Whisk in the last tablespoon of btuter. Dust with parsley. Serve.

- Preheat oven to 375°. In an 8-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon to paper towels to drain, reserving drippings., Add apple to drippings; cook and stir over medium-high heat until crisp-tender, 2-3 minutes. Remove from heat.
